Fresh Apple Cake image

I used to make this cake and send it to my son and his unit when he was in the military overseas. It keeps so well for shipping as a gift. And it didn't last long after it got there because it is so good. They were always asking for more. It is always one of the cakes I get requested to make during Christmas holidays. The house...

Number Of Ingredients 12

1 1/4 c cooking oil
2 c sugar
4 eggs, well beaten
2 1/2 c plain flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
2 tsp vanilla
1 c chopped pecans
4 c red delicious apples, peeled, cored and cut into medium sized chunks

Steps:

  • 1. Combine oil and sugar. Beat in eggs. Beat until creamy. Add vanilla.
  • 2. Sift together all of the dry ingredients and add to liquid ingredients a little at a time. Batter will be very stiff.
  • 3. Mix in apples and pecans. Bake in ungreased 13X9 pan at 325 F for 55 minutes. When a toothpick inserted in the middle comes out clean, it's done. Hope you enjoy it. We sure do!
