FRENCH ONION BEEF AU JUS image

31/2 pounds fresh beef brisket
1/2 cup soy sauce
2 tablespoons canola oil
1 clove garlic
11/2 teaspoons browning sauce
1 teaspoon Beau Monde seasoning
11/4-ounce package dry onion soup mix
5 cups water
1 large sweet onion, cut into 1/4-inch slices, and separated into rings
1/4 cup butter
2 cups water
4 French rolls, sliced lengthwise and buttered
Grated gruyere or Swiss cheese

Steps:

  • Blend soy sauce, oil, garlic, browning sauce, and Beau Monde in blender. Blend on medium till smooth. Add onion soup mix and 5 cups water. Blend on low just until mixed. Place brisket in a 31/2-4-quart casserole or Dutch oven; pour soy sauce mixture over beef. Cover tightly and cook at 350 degrees for 2 hours. Meanwhile, lightly brown onion rings in butter; add to beef. Continue cooking 1 hour, or until beef is tender. Remove brisket from liquid and let stand 20 minutes before carving. Add 2 cups hot water to cooking liquid. Keep hot. Carve brisket across the grain into thin slices. Return to cooking liquid. Toast roll halves under broiler. To serve, place hot beef slices and liquid on top of rolls. Sprinkle with the cheese and broil just until cheese melts.
