Foil-Package Fish with Horseradish Sauce image

Cooking fish in a foil packet means all the flavors-from horseradish and sour cream to zucchini and lemon-are even more impressive.

Number Of Ingredients 8

1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/4 cup BREAKSTONE'S Sour Cream
1 Tbsp. prepared horseradish
1 Tbsp. lemon juice
4 whitefish fillets (1 lb.), each cut crosswise in half
4 cups baby spinach leaves
1 small zucchini, cut into thin matchlike sticks
1/2 cup thinly sliced red peppers

Steps:

  • Heat oven to 375°F.
  • Mix first 4 ingredients until well blended.
  • Place 1 fish piece onto center of each of 4 large sheets heavy-duty foil; top each with 1 cup spinach and second fish piece. Top with zucchini, peppers and cream cheese mixture; fold to make packets. Place in single layer in 15x10x1-inch pan.
  • Bake 15 min. or until fish flakes easily with fork. Remove from oven. Let stand 5 min.
