Cucumber Bite Appetizers image

A delicious appetizer for your next party or potluck. Recipe from Food Network/Trisha Yearwood

Number Of Ingredients 8

5 oz cream cheese, room temperature
4 oz blue cheese, room temperature
1/2 c dried cranberries
1/2 c finely chopped pecans
4 Tbsp unsalted butter, room temperature
1 Tbsp honey
kosher salt and freshly ground black pepper
1 english cucumber, sliced in half lengthwise, seeds scooped out with a spoon to create 2 boats

Steps:

  • 1. Combine the cream cheese, blue cheese, cranberries, pecans, butter, honey and some salt and pepper in a stand mixer fitted with the paddle attachment. Mix until fully combined.
  • 2. spread the filling into the cucumber "boats". Slice crosswise into 1-inch pieces.
