Cubano Sandwiches image

A Cuban recipe from one of my Food and Wine cookbooks.The pork cooks in the fresh citrus juices for 30 minutes, so it's important to shred or very thinly slice the pork. A panini press is used here - but you could improvise using a heavy skillet (you could make it even heavier by placing a foil-wrapped brick in that skillet) pressing on top of the sandwiches. Enjoy!

1/2 cup(s) fresh orange juice
1/4 cup(s) fresh lime juice
2 tablespoon(s) olive oil
2 clove(s) garlic, smashed
1 tablespoon(s) dried oregano, crumbled
1 teaspoon(s) ground cumin
1/4 cup(s) chopped cilantro
1/4 cup(s) thinly sliced red onion
salt and freshly ground black pepper, to taste
3/4 pound(s) boneless pork roast,very coarsely shredded/sliced
4 soft hero rolls, split but still attached on one side
6 ounce(s) black forest ham
4 ounce(s) sliced genoa salami
6 ounce(s) sliced swiss cheese
2 large dill pickles, thinly sliced lengthwise
yellow mustard - for serving
hot sauce, for serving
melted unsalted butter, for brushing

Steps:

  • In a bowl, whisk the orange juice with the lime juice, olive oil, garlic, oregano, cumin, cilantro, and onion. Season with salt and pepper. Stir in the shredded pork and let stand for 30 minutes.
  • Using a slotted spoon, mound the pork on the bottom of each roll. spoon a little of the marinade over the pork and top with the ham, salami, Swiss cheese, and dill pickles. Spread mustard and hot sauce on the top half of each roll and press the sanwiches closed. Brush the rolls on top and bottom with butter.
  • Preheat a panini press.Working with one or two sandwiches at a time, press the cubanos until the rolls are toasted and the Swiss cheese is melted. Cut sandwiches in half and serve immediately.
