Cream-Filled Chocolate Supreme Muffins image

Number Of Ingredients 19

MUFFINS
3 cup(s) all purpose flour
2 cup(s) granulated sugar
1/2 cup(s) baking cocoa
2 teaspoon(s) baking soda
1 teaspoon(s) salt
2 cup(s) cold water
3/4 cup(s) canola oil
1 - egg
2 tablespoon(s) white vinegar
2 teaspoon(s) vanilla extract
FILLING
4 ounce(s) cream cheese, softened
1/4 cup(s) granulated sugar
1/8 teaspoon(s) salt
2 tablespoon(s) beaten egg
1/2 teaspoon(s) vanilla extract
3/4 cup(s) chocolate chips, mini
- powdered sugar

Steps:

  • In large bowl, combine flour, sugar, cocoa, baking soda & salt. In another bowl, combine water, oil, egg, vinegar & vanilla. Stir into dry ingredients until just moistened.
  • For filling, beat cream cheese, sugar & salt until smooth. Beat in egg and vanilla. Fold in chips.
  • Fill paper cups 1/2 full with muffin batter. Pipe filling into center of each; cover with remaining batter.
  • Bake at 350 for 25-30 minutes, or until toothpick comes out clean. Sprinkle with powdered sugar, cool completely on wire racks.
