Filling can be made ahead of time, and refrigerated until needed. I think these would also be good, made with puff pastry or phyllo pastry. Might have to bake in muffin or mini muffin pan.

Steps:
- Combine filling ingredients in small saucepan.
- Stir over medium heat until slightly thickened. Cool, so pie crust doesn't melt when assembling.
- Put 1 tsp filling on each pie crust circle, gather and pinch crust.
- Top each with small dollop of filling and a sprinkle of cinnamon.
- Bake at 400* for 20 minutes.
