Coconut Custard Pie image

Number Of Ingredients 9

1 - unbaked deep dish pie crust
1 cup(s) flaked coconut
3 - eggs, beaten
2 2/3 cup(s) 2% milk
2/3 cup(s) sugar
3 tablespoon(s) flour
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) salt
1/4 teaspoon(s) nutmeg

Steps:

  • Line edges of pie shell with heavy-duty foil and bake at 450 degrees for 8 minutes.
  • Remove foil and sprinkle coconut over bottom of shell. Lower oven temperature to 350.
  • Combine eggs, milk, sugar, flour, vanilla and salt. Pour over coconut and sprinkle with nutmeg. Bake for 30 to 35 minutes, or until it's set in the middle.
