Chocolate Corn Flake Clusters image

1 pound bittersweet or semisweet chocolate , chopped into 1/2 inch pieces
4 cups corn flakes

Steps:

  • 1. In a microwave save bowl, heat two thirds of chocolate for 30 seconds at high power then stir with a rubber spatula. Continue to microwave for 30 seconds at a time, stirring in between until fully melted.
  • 2. Stir in remaining one third of chocolate until melted. The melted chocolate should register between 104-113 degrees on an instant read thermometer. A quick way to check tempering is to apply a small quantity of chocolate to a piece of paper or to the point of a knife. If the chocolate is tempered, it will harden evenly and show a good gloss in 5 minutes.
  • 3. Pour cornflakes into large bowl then pour about half of tempered chocolate over them. Using a rubber spatula, quickly fold the cornflakes into the chocolate until they're evenly coated. Once set repeat with remaining chocolate to give corn flakes a second coat. Using a spoon quickly scoop small rounds onto parchment paper allow to harden then serve.
