CHICKEN & MUSHROOMS WITH COUSCOUS image

Number Of Ingredients 10

1/2 lb mushrooms
1 clove garlic
1 small zucchini
1/4 cup pine nuts
6-8 small chicken thighs or breast halves preferably boneless
slat & pepper to taste
2 Tbl butter
2 (14 1/2 oz) can clear chicken broth
1 (7 oz) package Couscous Pilaf mix
1 orange, cut in wedges

Steps:

  • Clean mushrooms and cut in quarters. Mince garlic. Shred or dice zucchini. Toast pine nuts 'til golden and set aside. Season chicken with salt & pepper to taste. Melt butter in 10 inch non-stick skillet med. heat. Add chick. saute til golden brown. During last two min. of browning add mushrooms, zucchini and garlic. When mushrooms/zucc. are golden, drain excess fat and save 2 Tbl. Add 1/2 cup chick. broth to skillet. COver and simmer 15-20 min. til chick. is tender and done. Remove chick. to broiler pan and broil til skin is crispy. 5-8 min. keep chick. warm while preparing couscous. Pour pan juice into 4 cup measure. add additional chicken broth to measure 2 1/4 cups. Return mixture to skillet along with reserved 2 Tbl fat. Bring to boil. Stir in couscous and cook accord- ing to pkg. directions. Remove from heat when done. Stir in cooked zucchini and pine nuts. Serve couscous with chicken and garnish with orange wedges
