Cheesy Potato Planks image

On another site, I read a mixer's recipe for a blue cheese potato bake. I thought it sounded really good, but a bit heavy. So here is what I did. I can see adding some sauteed mushrooms or cooked, crumbled bacon under the cheese next time.

Number Of Ingredients 4

4 russett potaotes (i left the skin on and filled up the sheet pan)
olive oil
salt and pepper
1 Tbsp cheese per potato plank (your choice of cheese)

Steps:

  • 1. Wash potatoes and slice long ways into about 1/4 inch thick slices. Lay on a sheet pan that has been lined foil or parchment paper. Brush with olive oil. Bake in a 350 oven for 15 minutes, flip over, brush with olive oil, salt and pepper and bake another 15 minutes or until tender. Top with about a Tablespoon or so of your choice of cheese and bake for another 5-7 minutes or until the cheese melts. Be cautious on the salt if you are using a salty cheese like blue cheese.
  • 2. I made Some With Blue Cheese Crumbles, grated cheddar cheese and grated Italian blend, but you can use whatever you want or like
