Cassies Cheesy Mexican Dish image

Easy to throw together and very versatile...I've added fresh corn to this in the past, can also make as spicy as you like with hot pepper flakes, Jalapeno's etc...I added pepper flakes today! Enjoy! My photos & recipe

Number Of Ingredients 12

1 - 2 tablespoon(s) oil
8 ounce(s) ground chuck
1 medium onion, chopped
1 - 4 ounce(s) can, diced green chiles
1 - 28 ounce(s) can chopped tomatoes - drained, but leave a little juice
1 package(s) (1.25) taco spice and seasoning
1/8 teaspoon(s) garlic salt
6 ounce(s) tortilla chips
4 cup(s) shredded monterey jack cheese
1 - 8 ounce(s) sour cream
3/4 cup(s) shredded cheddar cheese
green - onions, optional for garnish

Steps:

  • In a large skillet, add oil and once hot, brown the onion and ground chuck ( chopping into small pieces as it cooks) until beef is no longer pink and onion is tender. Drain and add back to skillet.
  • Now, add the tomatoes, chiles, salt, pepper flakes if using, taco seasoning, stir well to combine. Bring to a boil, then simmer for 15 minutes or until most of juice is evaporated, stirring occasionally.
  • Preheat oven to 350 degree F. Spray a 2 quart casserole dish with non stick cooking spray. Layer half the tortilla chips in bottom of dish, then spread half sauce over chips, next cheese. Repeat twice - should end with cheese.
  • Spread the top with sour cream. Place in oven and bake 30 - 35 minutes.
  • Add remaining cheddar cheese and place back into oven until bubbling and golden - 10 - 15 minutes.
  • Let stand about 15 minutes before serving. Can serve with additional sour cream and green onion slices if desired.
