3 large carrots, shredded (2 1/2 cups)
1 medium celery stalk, sliced (1/2 cup)
1/2 cup raisins
1/4 cup fat-free mayonnaise, or salad dressing
1/4 cup plain or lemon fat free yogurt
1 teaspoon sugar
1 teaspoon lemon juice
Salad greens, if desired

Steps:

  • Mix all ingredients except salad greens.
  • Serve on salad greens. Cover and refrigerate any remaining salad.
