Black Bean Stew image

Saw this in the local paper and had to try-- it is great! If you have a bunch of hungry people and little time, this is for you. Easy, tasty and healthy. Just the ticket for a cold winter's evening. Smoked turkey sausage could easily be replaced by chorizo, ratatoule, koulbasa, or any sausage. Enjoy. This dish would be enhanced...

Number Of Ingredients 8

2 c instant brown rice
14 oz smoked turkey sausage
1 tsp olive oil
3 clove garlic, minced
1/4 tsp ground allspice
2 can(s) 15.5 oz black beans, drained and rinsed
1 can(s) 14.5oz diced tomatoes with juice
1 can(s) 4oz diced green chillies

Steps:

  • 1. Cook instant rice according to instructions. Cover and set aside to keep warm.
  • 2. Cut the sausage into 1/4 inch slices. Heat the oil in a large saucepan over medium heat. Add sausage to pan and saute until lightly browned, about 3 minutes. Add garlic and allspice and saute another 30 seconds.
  • 3. Stir in the beans, tomatoes and chiles. Bring the mixture to a simmer. Serve over the rice.
