Baked Paddlefish, White River Recipe - (3.6/5) image

2 pounds paddlefish steaks or fillets
1 garlic clove cut
1 teaspoon salt
1 teaspoon freshly-ground black pepper
4 tablespoons butter or margarine
4 slices raw bacon
1 can tomatoes - (15 oz)
1 medium onion chopped
1 green pepper chopped
1 bay leaf crumbled
1/8 teaspoon cayenne pepper

Steps:

  • Rub fish with cut garlic. Season with salt and pepper. Place in a buttered casserole dish, and lay bacon strips across top. Mix remaining ingredients, and pour over and around fish. Bake at 400 degrees for 30 minutes or until fish flakes with a fork. This recipe yields ?? servings.
