Pepper Lover's Pork Chop Skillet image

A trio of bell peppers plus ground black pepper and crushed red pepper give these bone-in skillet-cooked pork chops great color and flavor.

6 bone-in pork chops (2 lb.), 1/2 inch thick
1 tsp. coarse ground black pepper
3 bell peppers (1 red, 1 green, 1 yellow), coarsely chopped
3/4 cup plus 2 Tbsp. chicken broth, divided
6 oz. (3/4 of 8 oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1 tsp. garlic powder
1/4 tsp. crushed red pepper

Steps:

  • Sprinkle chops with black pepper. Add 3 chops to large nonstick skillet; cook on medium heat 3 to 4 min. on each side or until done (160ºF). Transfer to platter; cover to keep warm. Repeat with remaining chops.
  • Add peppers and 1/2 cup broth to skillet; cook on medium-high heat 5 min. or until peppers are crisp-tender and most of the broth has evaporated. Whisk in Neufchatel, remaining broth (6 Tbsp.), garlic powder and crushed pepper; cook and stir 2 to 3 min. or until sauce is well blended and heated through.
  • Serve sauce over chops.
