Bacon Wrapped Cheese-Stuffed Chicken image

These are so quick and easy making them a weekday fav, but fancy enough for a party! You can switch up cheeses and spices to suit your taste. Sometimes I use smoked provolone or gouda, Gruyere, oregano, mozzarella, and sage or basil. I got this out of a First magazine years ago and tweaked it.

4 chicken breast ,boneless,skinless
4 1/2 inch x 1/2 inch thick sticks, 2 1/2 inches long, smoked provolone cheese
1/2 tsp dried parsley
1/4 tsp garlic powder
1/2 tsp salt
1/2 tsp cracked black pepper
4 strips smoked bacon

Steps:

  • 1. Heat oven to 500 degrees F. Cut cheese into pinky finger sized sticks. (1/2 in. x 1/2 in. wide x 2 1/2 in. long) Set aside. Mix salt, pepper, garlic powder, and parsley together. Set aside.
  • 2. Pound chicken breasts into even thickness. With rough side up, sprinkle evenly with seasoning mix. Place cheese stick on one end of breast and roll up,tucking in the ends. Secure with toothpick.
  • 3. Wrap 1 bacon slice around each chicken breast. Put in a roasting pan. Bake 15 minutes or until chicken is cooked through and bacon is browned. Let stand 5 minutes then pull out toothpicks before serving.
