Asian Style Chicken Noodle Bowl image

Tasty noodle bowl

8 oz rice noodles
1/2 c soy sauce
3 Tbsp oyster sauce
1 Tbsp lemongrass paste
2 Tbsp gochujang or chili paste
1/3 c brown sugar
1 tsp grated ginger
4 clove garlic minced
2 Tbsp olive oil
1 Tbsp cornstarch
3 boneless skinless chicken thighs cut into pieces
1/2 c grated carrots
1 c fresh mushrooms chopped
4 green onions chopped
juice of 1 lime
fresh cilantro for garnish

Steps:

  • 1. Place the rice noodles in boiling water and let soak according to package directions.
  • 2. Mix the soy sauce, oyster sauce, lemongrass paste, gochujang, ginger , brown sugar, cornstarch and garlic together in a bowl and set aside.
  • 3. Add the oil to a wok or large skillet. Add the chicken and mushrooms. Stir fry until chicken is done. Add the carrots and green onions. Add the sauce mixture and bring to a boil and let thickened a bit. Stir in the noodles. Add the lime juice Top with the cilantro
