Apple Strudel Bread image

I love fruit breads. I had apples I needed to use and also had an order for apple bread, so I added the strudel to make it a bit fancier. The result was amazing.

BREAD
2 medium apples, 1 diced and 1 grated
2/3 c brown sugar, firmly packed
1/2 c sugar
2 1/4 c all purpose flour
2 tsp baking powder
1 tsp salt
2 eggs
1/4 c apple butter or applesauce
1/2 c mayonnaise, real
2 tsp cinnamon
1 tsp apple pie spice
1 tsp pure vanilla extract
STRUDEL
1/2 c flour
1/3 c brown sugar, firmly packed
6 Tbsp butter, room temperature
1 tsp cinnamon
1/2 tsp apple pie spice
1/2 c walnuts, chopped

Steps:

  • 1. Preheat oven to 350f. Spray a 9x5 pan with nonstick spray and coat with sugar. Separate 1/3 of the apples and set aside.
  • 2. For the strudel: Mix all ingredients until mixture resembles a crumble. Divide in half and set half aside. Mix the other half with 1/3 of the apples set aside earlier.
  • 3. Combine all bread ingredients except apples and mix at medium speed until fully incorporated and smooth. Add in the apples and mix another minute to incorporate.
  • 4. Pour half of the bread mixture into prepared pan. Gently top this with the apple and strudel mixture, evenly distributing it on bread batter. Top with remaining batter. Top with remaining strudel mixture.
  • 5. Bake for 1 hour to 1 hour and 15 minutes (depending on your oven) till cooked through. Be careful not to over bake. Let stand 10 minutes before removing from pan.
