Time 1h25m

Number Of Ingredients 19

Butter and flour to prepare 9×5-inch loaf pan
½ cup plus 1 tablespoon brown sugar, divided
1 teaspoon cinnamon
½ teaspoon freshly grated nutmeg
2 apples, peeled, cored and diced (we used Braeburn)
1 tablespoon plus 2/3 cup granulated sugar, divided
1 teaspoon apple pie spice
½ cup walnuts, chopped small
½ cup butter (8 tablespoons)
2 eggs
1½ teaspoons vanilla extract
1½ cups all-purpose flour
2 teaspoon baking powder
¼ teaspoon baking soda
½ cup sour cream
¼ cup brown sugar
1 tablespoon butter
2 tablespoons heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour 9×5-inch loaf pan. Set aside.
  • In a small bowl mix ½ cup brown sugar, cinnamon and nutmeg. Set aside.
  • In a medium bowl, toss apples with 1 tablespoon brown sugar, 1 tablespoon granulated sugar, apple pie spice and walnuts. Set aside.
  • In the bowl of a stand mixer with the paddle attachment, cream butter then add 2/3 cup granulated sugar. Beat until light and fluffy, about one minute.
  • With mixer running, add one egg at a time and mix. Scrape bowl and mix for one minute on medium until slightly pale in color.
  • Add vanilla and mix to combine.
  • In a small bowl, mix flour with baking powder and baking soda.
  • With mixer running, alternate adding flour mixture and sour cream. Mix just to combine but do not over mix.
  • Pour half of the batter into the prepared pan and spread to the sides. Add half the apple mixture but pat and poke the apples down into the batter. Sprinkle with half the sugar mixture.
  • Repeat with the rest of the batter, apples and sugar mixture, patting the apples into the batter before topping with the last of the sugar mixture.
  • Bake on center rack of oven for 50 to 60 minutes or until a toothpick inserted into the center of the bread comes out clean. (When checking for doneness insert toothpick into center of bread, making sure your tooth pick is going into batter and not an apple to get a true test for doneness. Ours took exactly 60 minutes.)
  • While cake is baking, prepare glaze by combining brown sugar, butter and cream in a small sauce pan. Heat to a boil and simmer on medium low for two minutes without stirring.
  • Remove from heat and sift in the powdered sugar while you whip. If it lumps, just pass through a small sieve. Let it sit at least ten minutes.
  • Once cake is out of the oven, cool in the pan on a rack for 15 minutes.
  • Loosen sides and flip out of pan and onto the cooling rack, then place the rack over a sheet pan.
  • Drizzle the glaze over the top and let it melt into the warm cake.
  • Serve warm or cool completely.

APFELSTRUDEL (CLASSIC APPLE STRUDEL)

Apfelstrudel (Classic Apple Strudel) image

Provided by Food Network

Categories     dessert

Time 2h5m

Yield about 16 servings

Number Of Ingredients 15

3 cups bread flour
1 egg
1/4 cup soft, unsalted butter
1/2 teaspoon salt
1 cup cold water
Vegetable oil
Bread flour
3/4 cups coarse white bread crumbs
1/2 cup, melted unsalted butter
1 1/2 pounds, 14 ounces peeled, cored and thinly sliced Granny Smith, Pippin or other cooking apples
1/3 cup granulated sugar
3/4 cup dark raisins
3/4 cup coarsely crushed nuts
2 teaspoon ground cinnamon
5 ounces firm, unsalted butter

Steps:

  • To make the dough: Place the flour, egg, soft butter and salt in the bowl of an electric mixer. Mixing with the dough hook on low speed, add enough of the cold water to make a soft dough. Knead the dough in the electric mixer at medium speed until it is smooth and elastic, about 5 minutes. Form the dough into a ball and coat it with oil. Cover and let rest at room temperature for about 1 hour.
  • For the filling: To make the coarse bread crumbs, toast slices of white bread in the oven until crisp, about 10 minutes. Break into pieces and place in a food processor. Pulse the processor until the bread resembles large bread crumbs. In a saute pan, over medium heat, saute the bread crumbs in 1/4 cup of the melted butter until they are golden brown. Reserve the sauteed bread crumbs and the remaining melted butter separately. Combine the sliced apples, granulated sugar, raisins, nuts, ground cinnamon and about half of the bread crumbs. Cut the firm butter into chunks and gently toss together with the apple mixture.
  • To Assemble: Cover a work surface approximately 4 feet by 4 feet with a clean piece of cloth. The cloth is used to facilitate stretching and rolling the dough. Make sure that the cloth is securely fastened to the table. Dust the cloth lightly with the flour. Place the rested dough in the center of the cloth. Using a rolling pin, roll the dough into a large, thin rectangle. When the dough is as thin as it will go with the rolling pin, it is time to begin stretching and pulling the dough. To stretch and pull the dough, place your hands under the dough, and, using your thumbs and the back of your hand, gently begin pulling and stretching the dough. Pull and stretch the dough until it is a rectangle approximately 3 1/2 feet by 2 1/2 feet. Be very careful when you are pulling and stretching not to tear the dough. After it is pulled to the proper size, let the dough relax on the table for a few minutes. There will be a thick edge around the edges, trim this away. You also want to trim off any parts of the dough that hang over the edges of the table. Place the apple filling next to the long edge of the dough closest to you. Form the filling into a thick log. Brush some of the reserved melted butter generously over the remainder of the dough. Sprinkle the remaining bread crumbs over the dough. Using the cloth to help lift the dough, roll the strudel as you would a jelly roll, starting from the filling side. Place the strudel, seam side down, in a horseshoe shape on a sheet pan lined with parchment paper. Brush the strudel with the last of the melted butter. Bake in a preheated 375 degree F oven for about 35 minutes, Remove the pan from the oven and cool. Slice the the strudel into individual servings and serve either warm or at room temperature.

The History of Apple Strudel Bread

The origins of strudel date back to the medieval times in Austria, where it was originally made as a dessert for the wealthy. Over time, the recipe for strudel has evolved and been adapted in different parts of the world, including the United States.

Ingredients Used to Make Apple Strudel Bread

When making apple strudel bread, there are a few key ingredients that are typically used:

  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Eggs
  • Sugar
  • Apples
  • Lemon juice
  • Cinnamon
  • Nutmeg
The Process of Making Apple Strudel Bread

To make apple strudel bread, the dough is first made by combining flour, baking powder, salt, butter, eggs and sugar. The dough is then rolled out into thin layers and filled with sliced apples that have been tossed with lemon juice, cinnamon and nutmeg. The dough is then rolled up and baked in the oven until it is golden brown on the outside and tender on the inside.

How to Serve Apple Strudel Bread

Apple strudel bread is typically served warm, either on its own or with a scoop of vanilla ice cream. Some people like to dust the top of the bread with powdered sugar for an extra touch of sweetness.

Variations of Apple Strudel Bread

While the classic recipe for apple strudel bread is delicious on its own, there are many variations of the pastry that can be made depending on personal preference. Some people like to add raisins, chopped nuts or even chocolate chips to their apple filling for added texture and flavor. Other variations include swapping out the apple filling for other fruits such as peaches, pears or berries.

Conclusion

In summary, apple strudel bread is a delicious and indulgent dessert that combines the best of both worlds: the traditional Austrian pastry of strudel and American-style bread. This pastry is made with layers of flaky, buttery dough and a rich apple filling that is both sweet and tart.

Apple strudel bread is a delicious and comforting pastry that is perfect for breakfast, brunch, or dessert. It features a soft and fluffy bread dough that is filled with sweet and tangy apples, cinnamon, and sugar. The filling is then rolled up into a log and baked until golden brown. While making apple strudel bread may seem complicated, with a few tips and tricks, you can easily make it at home. In this article, we will share with you our top tips for making the best apple strudel bread recipe that is both fluffy and flavorful.

Tip 1: Use the Right Apples

One of the essential components of apple strudel bread is the apples. Choosing the right type of apple is crucial to achieving the perfect balance of sweet and tangy flavors. When selecting apples for your recipe, look for varieties that are tart and firm, such as Granny Smith, Honeycrisp, or Braeburn. These apples will hold their shape well during baking and provide a tart contrast to the sweet dough. Avoid using soft or mealy apples, like Red Delicious or Golden Delicious, as they are more likely to turn mushy when baked.

Tip 2: Use High-Quality Flour

The quality of the flour you use in your apple strudel bread recipe can make a big difference in the final result. When making bread, it is best to use high-quality all-purpose flour that is unbleached and unbromated. These types of flour are typically higher in protein, which is essential for creating a strong gluten network in the dough. A strong gluten network will help the dough rise properly and result in a fluffy and light texture.

Tip 3: Do Not Overmix the Dough

When making the dough for your apple strudel bread recipe, it is important not to overmix it. Overmixing the dough can lead to a tough and dense texture, which is not desirable in a light and fluffy bread. Mix the dough ingredients until just combined and then knead it briefly until it comes together. The dough should be smooth and elastic but not sticky.

Tip 4: Use a Parchment Paper

Using parchment paper is an excellent way to prevent your apple strudel bread from sticking to the baking sheet. Place a piece of parchment paper on the baking sheet before rolling out the dough. Once filled and rolled up, transfer the strudel carefully onto the prepared baking sheet. The parchment paper will not only prevent sticking, but it will also make cleaning up easier.

Tip 5: Add Cinnamon and Sugar to the Filling

The filling is an essential component of apple strudel bread. While the apples are the star of the filling, adding cinnamon and sugar to the mix will enhance their flavor and give the bread a warm and comforting taste. Mix the sliced apples with sugar and cinnamon in a bowl until coated. This will help to release the juices from the apples, making them tender and flavorful.

Tip 6: Roll the Dough Tightly

When rolling up the strudel, make sure to roll the dough tightly. This will help to prevent air pockets from forming and will ensure that the filling is evenly distributed throughout the bread. Be careful not to roll the dough too tightly, as this can cause the filling to spill out during baking. A tight but gentle roll is the key to perfect apple strudel bread.

Tip 7: Preheat the Oven

Preheating the oven is crucial when baking any type of bread. This helps to ensure that the bread will bake evenly and rise properly. Before placing your apple strudel bread in the oven, preheat it to 375°F (190°C). This temperature will allow the bread to bake evenly without browning too quickly on the outside.

Tip 8: Brush with Egg Wash

Adding an egg wash to your apple strudel bread before baking will give it a beautiful golden color and a shiny appearance. An egg wash is a mixture of beaten egg and milk that is brushed onto the surface of the dough before baking. To make an egg wash, whisk together one egg and one tablespoon of milk in a small bowl. Use a pastry brush to brush the egg wash over the top of the dough before placing it in the oven.

Tip 9: Allow to Cool Before Slicing

Once your apple strudel bread is baked and golden brown, remove it from the oven and let it cool slightly. Cutting into hot bread can cause it to become gummy and not hold its shape properly. Allow the bread to cool to room temperature before slicing to get perfect, even slices.

Conclusion

Apple strudel bread is a delicious and versatile pastry that can be enjoyed for breakfast or dessert. With the right ingredients and technique, making apple strudel bread at home is simple and enjoyable. Remember to choose the right apples, use high-quality flour, not to overmix the dough, use a parchment paper, add cinnamon and sugar to the filling, roll the dough tightly, preheat the oven, brush with egg wash, and let the bread cool before slicing. With these tips and tricks, you are sure to create the best apple strudel bread recipe that is both fluffy and flavorful.
