Amish Style Macaroni Salad image

Every region or nationality seems to have its own version of Macaroni Salad. It's interesting to see the small nuances of variations! I tweaked this one from a blog of Amish recipes. 2 c elbow macaroni, dry - 4 cups cooked
2 hard boiled eggs, chopped
3/4 c onion, chopped
1 c green pepper, chopped (can mix green and red pepper)
1/2 c celery, chopped
1 c mayonnaise
1 Tbsp sugar
2 Tbsp cider vinegar
1/2 tsp celery seed
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt (or to taste)
1/4 tsp ground black pepper

Steps:

  • 1. Cook the macaroni, drain and cool. Meanwhile. boil eggs, cool, shell and chop. Combine cooled macaroni, chopped eggs and veggies in a large bowl and set aside.
  • 2. In a small bowl, combine mayonnaise, sugar, salt and spices. Stir until smooth and pour into macaroni. Stir gently to combine. If salad seems too dry, add a little milk. Chill for an hour or more before serving.
