COUSCOUS SALAD WITH GRAPES AND FETA image

in a bowl, coming 1/2 cup couscous with 1/2 cup hot water
cover and let sit for 10 minutes. Fluff with a fork and fold in 1/2 cup chopped toasted walnuts, 1/2 cup crumbled feta (2 oz), 1/2 cup halved red seedless grapes

Steps:

  • 1/4 cup chopped parsley, 3 tbl olive oil, 2 tbl fresh lemon joice, 1/2 tsp kosher salt and 1/4 tsp black pepper. Refrigerate the salad for up to 1 day. serve with pita bread.
