Amish Scalloped Corn image

A tasty side to chicken or pork.

2 c canned corn (drained)
1 c milk
2/3 c cracker crumbs (saltines)
1 Tbsp sugar
1 tsp minced onion
salt and pepper, to taste
2 eggs
1/2 c butter, melted

Steps:

  • 1. Preheat oven to 350F. Grease or butter a casserole dish.
  • 2. Mix corn, milk, cracker crumbs, sugar, onion, salt and pepper in a bowl.
  • 3. Beat eggs and mix with butter. Combine with corn mixture and mix well. Pour into prepared casserole dish.
  • 4. Bake 40 minutes.
