Steps:
- Preheat oven to 350°F. Line 2 baking sheets with parchment. Mix first 3 ingredients in bowl. Whisk sugar and butter in large bowl, 1 minute. Whisk in egg and vanilla. Stir in dry ingredients, then raisins and nuts. Drop dough by rounded teaspoonfuls onto sheets. Bake about 12 minutes. Transfer parchment to racks; cool.
RUM-RAISIN AND CASHEW DROP COOKIES
This dough can also be used for Chocolate-Pecan, Coconut-Lime Oatmeal, Peanut Butter and Cherry, and Chocolate-Toffee Oatmeal drop cookies.

- Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt. In a medium bowl, using a mixer, beat butter and sugars until pale and fluffy, 4 minutes. Add vanilla and eggs and beat until combined. Add flour mixture and beat until just combined. Mix in rum-soaked raisins and cashews.
- Drop dough in 2-tablespoon-size balls on parchment-lined baking sheets about 2 inches apart. Bake until cookies are golden around the edges but still soft in the center, 12 to 14 minutes. Let cool on sheets 1 to 2 minutes, then transfer to wire racks and let cool completely.

RAISIN DROP COOKIES
These cookies are very simple but delicious!! I didn't use cinnamon or nutmeg and although some people may have thought this recipe may be tasteless, I loved it! However, if you love flavor, then you may try the cinnamon and nutmeg although I would recommend this cookie without them as well! This recipe may be to huge so you may cut it in half or I even made 1/4 of it and still got 8 medium sized cookies. Enjoy!

RAISIN DROP COOKIES
My mother has made these cookies for year and they are delicious. I never liked them until my aunt, Benice, made them once when I was at her house. The story goes that I came home talking about some delicious cookies that "Aunt Neecie" had made, so my mom called her to get the recipe. It was HER Raisin Drop Cookies that I always said I didn't like.

- Place raisins and water into saucepan and bring to boil. Boil until raisins are plump, about 3 minutes. Cool (do not drain).
- In mixing bowl, sift flour, baking powder, soda, salt, and spices together.
- In another bowl, cream shortening and sugar together until light and fluffy. Add eggs and vanilla and mix well. Stir in the raisins and any remaining water.
- Gradually add the flour mixture to the sugar & raisin mixture, blending thoroughly after each addition.
- Stir in nuts.
- Drop by tablespoon about 1" apart on ungreased baking sheets (USE A SILPAT! THEY ARE WONDERFUL!).

I love this recipe so versatile. You can try other ingredients, but I love the taste of raisins and cinnamon. This recipe will taste good with either unsalted or salted butter. In fact with this batch I used unsalted butter.

- 1. In a mixing bowl beat butter with an electric mixer on medium high for about 30 seconds.
- 2. Add about half of the flour,then the sugar, egg, vanilla, baking soda, cinnamon and nutmeg. Beat till thoroughly combined.
- 3. Beat in remaining flour. Stir in the one cup of raisins.
- 4. Drop by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.
- 5. Bake in a 375 degree oven for 8 to 10 minutes or till edges are golden brown.
- 6. Remove cookies immediately from cookie sheet and cool on a wire rack.
- 7. Recipe makes between 24 to 30 cookies.
