Easy Greek Spinach pie for Beginners (Spanakopita) image

It doesn't matter if you haven't made a pie before. This amazing easy Greek spinach pie recipe (spanakopita) is made in only one hour from scratch!

Provided by Eli K. Giannopoulos

Categories     Sides

Time 1h

Number Of Ingredients 11

2 small red onions, halved and sliced
1 spring onion, finely chopped (optional)
2 cloves of garlic, crushed
500g spinach, washed and roughly chopped (18 ounces)
a pinch of grated nutmeg
200g feta cheese, crumbled (7 ounces)
2 eggs, beaten
1-2 tbsps fresh dill, chopped (optional)
1 pack of filo pastry (400g / 14 oz typically) or if you can find some Horiatiko phyllo from your local Greek Deli.
butter
salt and pepper to taste

Steps:

  • If you choose to prepare this Greek spinach pie recipe with commercial phyllo dough, it is important to thaw completely the phyllo dough by putting it in the fridge from the previous day. For the beginners at working with phyllo, check the handling tips before start making the spanakopita.
  • Heat the oven to 200C/fan 180C/gas 6.
  • To prepare this spinach pie recipe, sauté the onions in a large knob of butter until soft and turning golden. Add the garlic and cook for a couple of minutes. Add the spinach in batches and cook until wilted. Cool, then tip into a bowl (leaving behind any excess liquid from the spinach) and mix in the nutmeg, feta, eggs, spring onion and season. This will be the filling of the spanakopita.
  • For this spinach pie recipe you will need a non stick baking pan, about 20-22cm. Put the first sheet of filo in the pan and brush with butter, letting the excess hang over the sides. Keep going with the rest of the sheets, turning a little before adding each additional pastry sheet and brushing all over with butter. When all the pastry is used up, tip in the filling of the spanakopita and fold over the excess pastry to cover. If you like to prepare a larger pan of spanakopita for a big crowd, double the ingredients for the filling and use a 25*35 cm baking dish. Layer the 4-5 phyllo sheets to form the bottom of the spanakopita, tip in the filling and top with 4-5 more phyllo sheets.
  • Butter the top of the spinach pie with melted butter and scar with a sharp knife. Bake in preheated oven for about 30 minutes until the filo is crisp and golden.
  • Leave the spanakopita cool down for 10-15 minutes before cutting into pieces. Serve the spinach pie with Greek feta salad. Enjoy!

Time 1h40m

Yield 12 servings

Number Of Ingredients 17

Nonstick cooking spray or butter, for the baking dish
1/2 cup pine nuts
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon olive oil
2 yellow onions, diced
2 garlic cloves, minced
Three 20-ounce bags frozen chopped spinach, thawed and squeezed of excess water
4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon freshly ground black pepper
2 teaspoons kosher salt
Pinch nutmeg
8 sheets frozen phyllo dough, thawed
3 tablespoon unsalted butter, melted
2 teaspoons za'atar (if you can't find za'atar, use sesame seeds)

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. Remove from heat and let cool.
  • In a large bowl, mix the eggs, feta, ricotta, Parmesan, pine nuts, pepper, salt and nutmeg. Add the reserved spinach mixture and stir to combine. Transfer to the baking dish, pressing to make sure it is even.
  • For the phyllo dough crust: Layer sheets of phyllo onto the spinach mixture, brushing each sheet with melted butter before adding the next. Fold the edges to make a crust and brush with butter. Sprinkle with za'atar or sesame seeds. Bake until golden brown, 55 to 60 minutes.

SPINACH PIE

Provided by Ina Garten

Time 1h35m

Yield 6 to 8 servings

Number Of Ingredients 13

3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

EASY SPANAKOPITA

Easy Spanakopita image

This easy spanakopita recipe is Greek-inspired and so delicious. Make it with store-bought or homemade phyllo dough. Includes a step-by-step video for great results every time!

Time P1DT1h40m

Number Of Ingredients 12

3 tbsp olive oil, (divided)
½ medium onion, (chopped (1/2 cup))
2 garlic cloves (minced)
24 ounces frozen chopped spinach, (thawed and well drained (2 1/2 cups thawed drained spinach, packed))
1 bunch green onions, (chopped)
¼ cup fresh dill, (chopped)
2 large eggs, (cracked)
10 oz crumbled feta cheese
½ teaspoon fresh cracked black pepper
1/2 tsp Aleppo pepper
½ cup extra virgin olive oil (or more as needed)
1 package phyllo dough,

Steps:

  • For the "easy" version of this recipe (delicious and simple, but less authentic), use frozen phyllo dough. Defrost your phyllo dough - you may need to start this process a day ahead. If you're making phyllo dough from scratch, allow ample time to make, rest, and roll out the dough sheets. Instructions are provided in the notes section.Preheat the oven to 350 degrees F.Before you start, make sure thawed spinach is very well drained by pressing it firmly several times in a mesh colander over the sink. Removing excess liquid is key to making the pie not soggy. In a sauté pan over medium heat add 1 tbsp olive oil. Once hot, add onion and cook until tender, about 5 minutes. Add garlic and cook for 30 seconds more, or until fragrant. Remove from heat and cool to room temperature.
  • In a mixing bowl combine the onion and garlic along with the remaining filling ingredients and the remaining 2 tbsp olive oil, mix well. Set aside.
  • Lightly brush the inside of a 9X13-inch baking dish with olive oil.Remove phyllo dough from package and lay it gently on a flat surface. Place a clean damp tea towel over the dough, covering it completely. This will keep it soft and pliable for the recipe. If you don't cover it, the dough will dry out quickly and break easily. If using 13x18 size sheets of phyllo dough, trim 1 1/2 inches from two of the edges (a short edge and a long edge). If using 9x13 size, overlap the pieces as you layer them to make sure you get good coverage on the bottom and sides for the lower crust.Lay phyllo one sheet at a time in the pan, covering the bottom of the dish, with dough coming up the sides. Lightly brush each sheet with olive oil. To spread the olive oil evenly, flick the oil lightly with your brush around the sheet, then brush gently to spread (it doesn't have to fully coat the sheet).
  • Once you have stacked 8 sheets, spread filling into the pan over the top of the sheets.
  • Repeat stacking and brushing with the remaining sheets of phyllo and oil, stacking 6-8 sheets on top of the pie. Brush the top liberally with remaining olive oil, using more as needed - having the top well oiled will give it a nice crunch and a golden sheen.
  • With a sharp paring knife, trim excess dough off the edges so the pastry is flush with the inside of the pan. Use the same knife to score the top layer of phyllo into 12 squares. Be sure not to cut all the way through the bottom crust, or you'll risk having a soggy pie.
  • Bake for 40-50 minutes, or until the top phyllo crust is golden brown all over. Cool until warm but no longer hot, about 30 minutes. Cut squares along score marks. Serve warm. This pie is also great at room temperature. Refrigerate leftovers for up to 4 days.

CRISPY GREEK-STYLE PIE

Crispy Greek-style pie image

A crispy pie that you can adapt for your needs, add chicken or keep it veggie. A good fail-safe for your repertoire

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Snack, Supper

Time 40m

Number Of Ingredients 5

200g bag spinach leaves
175g jar sundried tomato in oil
100g feta cheese, crumbled
2 eggs
125g filo pastry

Steps:

  • Put the spinach into a large pan. Pour over a couple tbsp water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly chop the tomatoes and put into a bowl along with the spinach, feta and eggs. Mix well.
  • Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and brush liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil.
  • Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.
