28 ounces artichoke hearts, drained
1 egg
1/2 cup white wine
3 tablespoons butter
3 tablespoons all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper, white preferably
1/2 cup half-and-half
1/2 cup milk
16 ounces chicken broth
sour cream, to taste (optional)
chives, to taste (optional)

Steps:

  • Into a blender or food processor add the artichoke hearts, egg, white wine and blend until smooth. Set aside.
  • In a large saucepan over medium heat melt butter. Mix in flour, salt, and pepper stirring until well combined and lightly golden brown. Slowly add cream and milk, whisking until mixture begins to boil and thicken.
  • Turn heat down and gradually add artichoke puree and chicken broth, stir well. Heat the soup adding more salt and pepper if needed. Serve hot with a dab of sour cream and chopped chives as a garnish.

2 tablespoons extra-virgin olive oil
2 leeks, white part only, washed well and chopped
1 clove garlic, minced
1 small potato, peeled and chopped
1 (8-ounce) package frozen artichoke hearts, thawed
2 cups chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons plus 1/3 cup mascarpone cheese
2 tablespoons chopped chives, for garnish

Steps:

  • Heat olive oil in a heavy, large pot over medium heat. Add the leeks and the garlic and stir. Add the potatoes and cook for 5 minutes, stirring often. Add the artichokes, stock, salt, and pepper and cook until the vegetables are tender, about 20 minutes.
  • Using a handheld immersion blender, or in a blender in batches*, puree the soup. Add the 2 tablespoons mascarpone and blend again to combine. In a small bowl, stir the remaining 1/3 cup mascarpone to soften.
  • Ladle the soup into serving bowls. Dollop the top of each of the soups with a spoonful of the softened mascarpone cheese and top the cheese with chives.
  • * When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

2 cups chicken stock or 2 cups chicken broth
1 (13 1/2 ounce) can quartered artichoke hearts, drained
2 tablespoons butter or 2 tablespoons margarine
1/2 cup finely chopped yellow onion
1 celery rib, finely chopped
2 garlic cloves, minced
2 tablespoons all-purpose flour
1/2 cup half-and-half
1/4 teaspoon salt
1/8 teaspoon white pepper
lemon slice (thinly sliced)

Steps:

  • Bring 1 cup of chicken stock to a boil over med-high heat in a saucepan.
  • Add in artichokes; lower heat to med-low and simmer, uncovered, for 6-7 minutes.
  • In another saucepan, melt the butter.
  • Add in onion, celery, and garlic; stir/saute 5-6 minutes.
  • Add in flour; stir until bubbly.
  • Add in artichoke/stock mixture and stir 1-2 minutes or until thickened.
  • Transfer mixture to a food processor or blender and process until chunky (may have to do this in batches) (also may use a stick blender).
  • Return to saucepan; add in remaining stock, half-and-half, salt, and pepper; simmer 5-10 minutes or until flavors are blended.
  • Ladle into individual soup bowls and float a lemon slice on top.
  • Note: for a richer soup, reduce stock to 1 1/2 cups and increase half-and-half to 1 cup.

1/8 cup olive oil, plus 1/8 cup
2 tablespoons chopped garlic
2 tablespoons chopped shallots
4 ounces bay scallops
4 ounces rock shrimp
3 plum tomatoes, seeded and diced
1/2 cup sliced mushrooms, button or cremini
2 lemons, juiced
3/4 cups fish stock or clam juice
1/4 cup dry white wine
2 tablespoons capers
3 green onions, sliced (greens only)
2 ounces butter, room temperature
2 ounces flour
2 jumbo or extra-large artichokes, steamed, halved and choke removed

Steps:

  • Cover the bottom of a saute pan with 1/8 cup olive oil and heat. Add the garlic and shallot to pan, and saute until light brown in color. Add the bay scallops and rock shrimp and saute for 1 to 2 minutes. Do not overcook scallops and shrimp. Remove from heat.
  • In another saute pan, add the remaining 1/8 cup olive oil and heat. Add tomatoes, mushrooms, lemon juice, clam juice, white wine, and capers. Simmer for 2 to 3 minutes. Reduce liquid by 25 percent.
  • Add the reserved seafood to the mixture of tomatoes and mushrooms. Add the green onions. In a small bowl, make a beurre manie by combining the butter and the flour and mixing until a paste is formed. Add the beurre manie to the mixture and whisk to incorporate. Bring to a simmer and cook for 1 to 2 minutes.
  • Place artichoke halves in a soup bowl and ladle mixture over artichoke.

CHILLED ARTICHOKE SOUP

This soup is to artichokes what vichysoisse is to leeks! Delicious as a starter (particularly for an Italian meal) or lunch on a warm day. If you are stumped by the metrics, don't forget you can use the handy converter provided by 'Zaar (to be found just after the quantity). Preparation time DOES NOT include 3-4 hour chilling time.

1 tablespoon olive oil
1 onion, finally chopped
1 garlic clove, finely minced
2 (800 g) cans artichoke hearts, drained and roughly chopped
600 ml vegetable broth
150 ml sour cream
2 tablespoons fresh thyme leaves, finely minced
2 sun-dried tomatoes, in thin strips (optional, as garnish)

Steps:

  • Warm the olive oil in a large saucepan and saute the onion and garlic just until they are softened, but not browned.
  • Add the artichoke hearts and vegetable broth to the mixture.
  • Bring to the boil, then reduce the temperature to a simmer; partially cover the pan and allow to simmer for 3 minutes.
  • Remove from heat, and puree the mixture with a hand blender (or do the same in a food processor) until smooth.
  • Return to the saucepan and allow to cool completely.
  • After it is cooled, add the sour cream and the thyme.
  • Place in the refrigerator, covered, for 3-4 hours before serving.
  • When serving, garnish each bowl with sun-dried tomato strips, if desired.

2 tablespoons olive oil
2 tablespoons butter
1 cup onion, chopped
1/2 cup celery, chopped
4 cups chicken broth or 4 cups vegetable stock
2 (14 ounce) jars artichoke hearts, drained and chopped
1 large carrot, thinly sliced
1/2 teaspoon thyme
1 tablespoon parsley
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup half-and-half
1/2 cup parmesan cheese, freshly grated

Steps:

  • In a dutch oven, combine olive oil and butter over medium heat.
  • stir until butter melts.
  • saute onion and celery in oil mix until onion is translucent.
  • stir in broth, artichokes, carrots, thyme, parsley, lemon juice, salt and pepper.
  • cover and cook about 30 minutes or until vegetables are tender.
  • remove from heat.
  • puree vegetables in batches in a food processor or blender.
  • return to dutch oven.
  • stir in half and half and cheese.
  • serve warm.
