4 pork loin chops, boneless
1/4 tsp. kosher salt
1/4 tsp. black pepper
1/4 cup Dijon Mustard
2 tbsp. spicy brown mustard
2 tbsp. olive oil
1/2 tsp. garlic powder
1/2 tsp. thyme
1/4 tsp. onion powder
1/4 tsp. dried oregano
1/4 tsp. dried basil
1/4 tsp. Italian Seasoning
1 Cup Parmesan Cheese - Grated

Steps:

  • Preheat oven to 400°F Season chops on both sides with kosher salt and pepper. In a shallow mixing bowl, combine Dijon mustard, spicy brown mustard, olive oil, garlic powder, thyme, onion powder, dried oregano, dried basil, and Italian seasoning. Dredge each chop in the mustard mixture, liberally coating both sides. On a large plate, spread Parmesan cheese into a thin layer. Coat mustard covered chops liberally with Parmesan cheese on both sides. Place a cooling rack on top of a baking sheet and place chops on cooling rack. This will allow them to get crisp on both sides. Bake for 20 minutes. Then broil on high, on the top oven rack for 3-4 minutes or until chops are nice and crisp and golden brown.

Quick & yummy recipe that I made last night, and LOVED! I used sliced pork loin instead of chops, and I didn't have any low-carb Italian, so used Woody's Parmesan Peppercorn, instead. And surprisingly, it didn't have a STRONG mustard flavor, even with 3 tbs of dijon. Another keeper from Better Homes & Gardens "Phase I Low Carb Recipes."

4 pork loin chops, cut 1/2-inch thick
1 tablespoon cooking oil
3 tablespoons dijon-style mustard
2 tablespoons bottled low-carb italian salad dressing (no sugar added)
1/4 teaspoon black pepper
1 medium onion, halved & sliced

Steps:

  • In a large skillet, cook meat in hot oil over medium-high heat for 5 minutes or just until brown, turning once.
  • Remove meat from skillet.
  • In a small bowl combine mustard, Italian dressing and pepper; set aside.
  • Add onion to skillet.
  • Cook and stir over medium heat for 5 minutes.
  • Push onion aside; return meat to skillet.
  • Spread mustard mixture over meat.
  • Cover and cook over medium-low heat for 10 minutes or until done (160 degrees F) and juices run clear.
  • Serve with onion over meat.
