Great for vegetable pizza, meat pizza, or pasta. Brush your favorite pizza dough with olive oil, spread sauce, add your favorite toppings, and bake per dough instructions. ¼ cup finely chopped onion
1 large clove garlic, minced

Steps:

1 pizza dough
2 1/2 cups mornay sauce
1 teaspoon olive oil
1 teaspoon clarified butter
1/2 cup red onion, finely chopped
1/2 cup red pepper, finely chopped
3 large garlic cloves, pressed
2 cups mozzarella cheese, grated
1 cup crabmeat
12 large prawns, deveined, rinsed and halved
12 large scallops, halved
1/2 cup grana padano, grated
1/2 teaspoon hot paprika, to sprinkle on top

Steps:

  • Preheat oven to 450ºF. Transfer dough to pizza pan. Cover bottom with mozzarella cheese. Place evenly crab meat, prawns and scallops on top. Sprinkle vegetable mixture and then ladle Mornay sauce over. Sprinkle parmesan cheese and some hot paprika.
  • Transfer to the preheated oven and bake for 22 minutes or until seafood are cooked. Let it sits for 15 minutes before slicing.

1 mama mia's thin pizza crust (or any store bought or homemade crust or dough)
1 large chicken breast, grilled and diced
1 cup cherry tomatoes, chopped
1 -2 cup shredded mozzarella cheese
chopped fresh basil (optional)
1/2 cup mayonnaise
1/2 teaspoon black pepper
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
2 tablespoons grated parmesan cheese
1 tablespoon white wine vinegar
1/2 teaspoon granulated sugar

Steps:

  • Mix together all the ingredients for the sauce until well combined; set aside.
  • Preheat grill to 400 degrees F.
  • Brush olive oil on both sides of the pizza crust. Place the crust top side down on the grill and grill for 2-3 minutes. The crust should just start to brown. Carefully remove from grill and flip over.
  • Spread the sauce on the cooked side of the crust and top with chicken, tomatoes and then cheese.
  • Place back on the grill and grill for 2-3 minutes. Move pizza to indirect heat and finish grilling another 4-5 minutes or until the cheese has melted and is nice and bubbly. Carefully remove from grill and allow to cool. Add chopped basil, slice and serve. Enjoy!

I make pizza at least once a month, and this one is constantly requested by my family ( my wife's all-time favorite). This recipe is for a large pizza (14 or 15 inches). The ingredient amounts should be varied to taste and size of pizza dough. We have tried many different ingredient combinations (minced or roasted garlic, chopped plum tomato, cooked Italian sausage, and chicken) but always come back to this recipe as written. Take the time to prepare homemade pizza dough...it really makes a difference. Times do not include dough preparation. NOTE: I can not overly stress the importance of quality ingredients (olive oil, cheeses, fresh basil, etc.).

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon plus a pinch salt
1/4 teaspoon cayenne pepper
3 -4 heads roasted garlic (recipe follows)
2 -3 tablespoons yellow cornmeal, for sprinkling on baker's peel
1 parmesan pizza dough (recipe follows-or storebought)
8 ounces fresh mozzarella cheese, sliced
4 ounces grated fontina
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh parsley leaves
3 -4 heads garlic, upper quarter removed
4 teaspoons olive oil
kosher salt
fresh ground black pepper
1 cup warm water (105 to 115 degrees F)
1 (1/4 ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
2 3/4 cups unbleached all-purpose flour (can sub 3/4 cup of the flour with whole wheat flour)
1/2 cup finely grated parmesan cheese
1 pinch salt

  • Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered.

  • Place the garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt and pepper and place, cut side down, on the baking sheet. Bake until the cloves are soft and golden, about 1 hour. Remove from the oven and let sit until cool enough to handle. Carefully remove each clove of garlic from the head. Squeeze each head of garlic to expel any cloves that you cannot remove individually. Set aside until needed.
  • In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.
  • Punch dough down and turn out onto a lightly floured surface and roll into a 15-inch circle.

This is a recipe my daughter made with a friend and brought home and cooked for me. It's quick and easy to make but SO tasty!

1 french baguette, full loaf
1 green bell pepper, thin sliced slivers
1 red bell pepper, thin sliced slivers
1 medium white onion, thin sliced slivers or diced
2 chicken breast halves, skinless and boneless, cubed
1 jar(s) alfredo sauce
1 stick butter, softened
2 pinch salt and pepper

Steps:

  • 1. Preheat oven to 425*F (220*C). Heat up skillet over medium heat. Cut chicken up into cubes or thin slices. Place into skillet, sprinkle with salt and pepper and cook chicken thoroughly.
  • 2. While chicken is cooking, cut baguette loaf in half and then cut lengthwise each half to make 4 pieces. Spread butter over crust and inner side bread. Place crust side up into oven and cook for 10 minutes, turn over and cook face down for 10 minutes or until lightly golden toasted.
  • 3. Take bread out of oven, turn face upward and sprinkle as thickly or sparingly as you like over the 4 bread sections the green and red bell pepper slices, onion, and chicken.
  • 4. Top with alfredo sauce, again as thickly or sparingly as you prefer. Place back in oven for 10 to 15 minutes until vegetables and sauce have time to heat up thoroughly.
  • 5. Remove from oven, plate and serve!

2 Tbsp sweet butter, unsalted
2 Tbsp yellow onion, finely chopped
2 Tbsp flour, all-purpose variety
4 clove baked garlic, smashed
1/4 tsp dried parsley
1/4 tsp dried oregano
1/8 tsp black pepper, freshly ground
1//8 tsp white pepper, freshly ground
1 c whole milk
1/4 c parmesan cheese
1/4 c pecorino romano
1 - 2 dash(es) truffle oil (optional)

  • 2. Gather your Ingredients (mise en place).
  • 3. Add a bit of salt to the baked garlic, and then smash it smooth with the flat end of your kitchen knife. You want it like a paste.

  • 8. Add the milk and whisk to combine.
  • 9. When the mixture begins to simmer, add the cheeses, and stir until the mixture begins to thicken, about 4 - 6 minutes.
  • 10. Chef's Note: At this point remove from the heat, and add the truffle oil, if using.
  • 11. Chef's Tip: If the mixture become too thick, add a bit of milk, a tablespoon at a time, until you have the right consistency. It should be thick enough to easily coat the back of a spoon, and leave a trail when you run your finger across it.

3 tablespoons all purpose flour
1 cup whole milk
1/4 tablespoon salt
1/4 teaspoon ground black pepper

1/2 cup havarti or Parmesan cheese

Steps:

  • In a medium saucepan over low heat, heat butter and stir in flour to form a roux. Allow flour to brown slightly, but do not permit it to burn. Once the roux has been created, whisk milk in slowly and gradually, avoiding lumps. Cook the sauce thus formed until desired thickness is reached, and then stir in cheese and spices slowly. Allow cheese to melt and mixture to become smooth and creamy. Allow to cool slightly, then top pizza. Tops 1-2 pizzas.

2 cups heavy cream
1/2 cup chopped basil
1/4 cup chopped fennel fronds
1/4 cup chopped chives
1 1/2 teaspoons finely grated lemon zest
2 tablespoons fresh lemon juice

Pinch of crushed red pepper flakes
Kosher salt, freshly ground pepper

Steps:

  • Purée cream, basil, fennel, chives, lemon zest, lemon juice, garlic, and red pepper flakes in a food processor or with an immersion blender until thick and creamy, 15-30 seconds; season with salt and pepper.
