1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count) or 1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
1/3 cup pizza sauce
8 slices mozzarella cheese (from 8-oz package), cut into 8 strips each
16 ripe olive slices or mini pepperoni slices, for eyes

Steps:

  • Heat oven to 375°F. Spray large cookie sheet with cooking spray.
  • Separate crescent dough into 4 rectangles; press seams together. (If using crescent dough sheet, unroll and cut into 4 equal rectangles.) Using pizza cutter or sharp knife, cut each rectangle crosswise in half. Place crescent squares on cookie sheet, and press out slightly. Bake 8 to 9 minutes or until light golden brown; remove from oven.
  • Spread about 2 teaspoons of the pizza sauce on top of each crescent square. Top each with 8 strips of mozzarella cheese, alternating and overlapping strips to look like mummy bandages. Add 2 olive or pepperoni slices to each for eyes.
  • Bake 2 to 3 minutes longer or until cheese slightly melts. Serve warm.

1 can (14-1/2 ounces) diced tomatoes
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon salt
1 large egg
1/4 cup butter, melted
1/2 cup shredded part-skim mozzarella cheese, divided
2 tablespoons grated Parmesan cheese, divided

Steps:

  • Drain tomatoes, reserving 1/4 cup liquid. In a bowl, combine the flour, baking powder, sugar, oregano and salt. Combine the egg, butter, tomatoes and reserved juice. Stir into dry ingredients just until moistened. Stir in 1/4 cup mozzarella cheese and 1 tablespoon Parmesan cheese. , Fill greased jumbo muffin cups two-thirds full. Sprinkle with the remaining cheeses. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes before removing to a wire rack.

These Halloween-themed English muffins pizzas are as delicious as they are playful. Olive-topped pepperoni slices form eyes while super thin slices of zucchini and yellow squash resemble the cloth that wraps these cute mummified snacks.

4 English muffins, split
Extra-virgin olive oil, for brushing
1 small yellow squash
1 small zucchini
3/4 cup 12 tablespoons marinara sauce
3/4 cup 12 tablespoons shredded low-moisture mozzarella
16 thin slices pepperoni
16 rounds sliced black olives
Flaky sea salt, for sprinkling
Dried oregano, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F. Arrange the muffins split side up on a large rimmed baking sheet, brush the muffins with oil and bake until barely browned but slightly dried, 5 minutes.
  • Meanwhile, trim the ends of the yellow squash and zucchini and cut them in half lengthwise, then thinly shave them with a vegetable peeler.
  • Spread 1 tablespoon plus 1 1/2 teaspoons of the marinara sauce onto each muffin half in an even layer, then sprinkle each with 1 tablespoon plus 1 1/2 teaspoons of the cheese. Arrange 2 pepperoni slices on the upper third of each muffin half so they overlap slightly, then place an olive slice on each pepperoni slice to resemble eyes. Arrange the shaved yellow squash and zucchini to slightly cover the tops and bottoms of the olive slices, then place in slightly overlapping layers across each muffin half to resemble the cloth of a mummy. Trim the excess to 1/4 inch around the edges. Reserve any remaining squash for another use.
  • Brush the mummy pizzas with oil and sprinkle with salt. Bake until the cheese melts and the squash wilts slightly, about 10 minutes. Sprinkle with oregano and serve.

  • Lay 4 muffin halves on baking sheet.
  • Spread a tablespoon of pizza sauce on each muffin half.
  • Set 2 olive slices in place for eyes on each muffin half.
  • Pull string cheese into pieces and lay on muffins above and under "eyes", layering them to look like mummy wrappings.
