4 (8-ounce) mahi mahi fillets
2 tablespoons canola oil
Salt and freshly ground black pepper
Citrus Vinaigrette, recipe follows
8 (6-inch) flour tortillas, cut into 2 1/2 to 3-inch circles, and deep fried
Red Cabbage Slaw, recipe follows
Tomato and Avocado Salsa, recipe follows
Pineapple hot sauce, store bought or recipe follows, for drizzling
3/4 cup orange juice
1/4 cup lime juice
1 cup fresh basil leaves, chopped
1 cup fresh cilantro leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 heaping tablespoon honey
1/2 cup canola oil
1/4 cup rice vinegar
1 tablespoon sugar
2 tablespoons canola oil
1/4 head red cabbage, finely shredded
1 large carrot, cut into fine julienne
1/4 cup chopped cilantro leaves
Salt and pepper
4 plum tomatoes, chopped
2 ripe Hass avocados, peeled, pitted and diced
1/2 small red onion, finely chopped
1 serrano chile, finely diced
1 to 2 limes, juiced
2 tablespoons canola oil
1 to 2 teaspoons honey
3 tablespoons chopped cilantro leaves
Salt and freshly ground black pepper
1 ripe pineapple, preferably Golden pineapple
2 tablespoons canola oil
1 large Spanish onion, coarsely chopped
1 container frozen pineapple puree, thawed
2 habanero chiles, chopped
1 cup rice wine vinegar
Salt and pepper
Honey

Steps:

  • Preheat grill.
  • Brush fillets with oil and season with salt and pepper. Grill for 3 to 4 minutes per side.
  • Remove from grill and drizzle with some of the Citrus Vinaigrette. Let rest 5 minutes and then flake with a fork.
  • Fill each fried tortilla with some of the mahi, top with the Red Cabbage Slaw, Tomato and Avocado Salsa, and drizzle with Charred Pineapple-habanero Hot Sauce.
  • Combine all ingredients in a blender and blend for 1 minute.
  • Combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • Gently combine all ingredients in a bowl. Season with salt and pepper, to taste.
  • Heat a grill to high or preheat the broiler. Place the whole pineapple (do not peel it) on the grill and grill until the entire surface is completely black and charred. Remove from grill and let cool slightly. Peel the pineapple, remove the core and coarsely chop the flesh.
  • Heat oil in a medium saucepan over medium-high heat; add the onion and cook until soft. Add the pineapple, pineapple puree, habanero and vinegar and cook until the mixture is completely soft, about 25 to 30 minutes. Transfer to a blender and blend until smooth. Season with salt, pepper and honey, to taste. Strain the mixture into a bowl.

2 cups long-grain rice
Kosher salt
2 cups Chimichurri, recipe follows
3 tablespoons olive oil
1 teaspoon cumin seeds
2 red bell pepper, cored, seeded, and chopped
1 large Spanish onion, chopped
Three (12-ounce) cans black beans, rinsed and drained
1/2 teaspoon sugar
Sherry vinegar, to taste
Kosher salt and freshly ground black pepper
1/2 pineapple, cored, peeled and sliced into 1/4-inch rings
1 mango, peeled, pitted, and chopped
1/2 red bell pepper, cored, seeded, and chopped
1/2 red onion, chopped
3 tablespoons chopped cilantro leaves
3 tablespoons olive oil
1 tablespoon peeled, minced fresh ginger
1 jalapeno, or to taste, chopped
1 to 2 limes, juiced
Kosher salt and freshly ground black pepper
Six 6-ounce mahi mahi fillets

2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 Spanish onion
1/3 cup olive oil
1/3 cup freshly squeezed lime juice
1 bunch fresh flat-leaf parsley
1 bunch fresh cilantro leaves
3 sprigs fresh oregano, leaves picked
2 large cloves garlic
1 jalapeno, stemmed and chopped

Steps:

  • Make the Green Rice: Combine the water and rice in saucepan with a tight-fitting lid. Season the water with salt. Bring to a boil, lower the heat, and simmer, covered, until tender, about 20 minutes. Set the rice aside, covered, for 10 minutes. Fluff the rice with a fork and stir in the chimichurri. Set aside, covered, until ready to use.
  • Meanwhile, make the Black Beans: Heat the oil in the saucepan over medium-high heat. Add the cumin seeds and cook, stirring, until fragrant, about 30 seconds. Add the bell pepper and onion and cook, stirring, until soft, about 8 minutes. Stir in the black beans and sugar. Bring to boil, lower the heat, and simmer for 5 minutes. Add the vinegar and season with salt and pepper. Set aside, covered, until ready to use.
  • Make the Salsa: Preheat a grill pan over high heat. Grill the pineapple rings, turning once, until charred, about 2 minutes. Transfer the rings to a cutting board and chop.
  • In a bowl, combine the pineapple, mango, bell pepper, onion, cilantro, olive oil, ginger, jalapeno, and lime juice. Season with salt and pepper and set aside. (The salsa can be prepared up to 2 days in advance.)
  • Make the mahi mahi: Arrange the fillets in baking pan, season with salt and pepper, and rub with the zest. Preheat a cast iron skillet over medium heat for 5 minutes. Raise the heat to high and heat the butter and oil. Working in batches, if necessary, sear the halibut fillets, turning once, until well browned and just cooked through, about 3 minutes per side.
  • Divide the rice and beans among the center of 6 plates, top with the fillets, and spoon some the salsa over each.
  • In a food processor, pulse the onion until finely chopped but not pureed. Transfer the onion to a bowl. Add the olive oil, parsley, cilantro, oregano leaves, garlic, and lime juice and pulse until finely chopped. Transfer the herb mixture to the bowl of onion and stir to combine. Season the chimichurri with salt and pepper.

1/4 cup red bell pepper, finely chopped
1/4 cup green bell pepper, finely chopped

1/2 teaspoon lime zest
nonstick cooking spray, as needed
4 mahi mahi fillets (4-ounces each)
1 tablespoon olive oil
1/2 teaspoon white pepper, freshly ground

Steps:

  • To prepare Pineapple Salsa, combine pineapple, red and green peppers, cilantro, 1 tablespoon lime juice, red pepper flakes and lime peel in medium bowl.
  • (Pineapple Salsa may be prepared 1 to 2 days ahead and refrigerated.).
  • Preheat broiler.
  • Spray rack of broiler pan with cooking spray.
  • Rinse mahi-mahi and pat dry with paper towels.
  • Place mahi-mahi on rack.

1/2 fresh pineapple, chopped 1/4-inch-inch cubes
1 jalapeno pepper, diced fine
2 sprigs cilantro, coarsely chopped

1 tablespoon blackening seasoning

  • In a heavy sauté pan over medium high heat, place one tablespoon vegetable oil.

2 cloves garlic, finely chopped
3 ounces shallots, halved lengthwise and thinly sliced crosswise (2/3cup)
3 tablespoons vegetable oil
2 fresh serrano chilies, minced,including seeds (2 to 3 inches long)
3/4 pineapple, peeled,cored,and cut into 1/2 inch cubes (4 cups, preferably not labeled "super sweet")
1 1/2 tablespoons asian fish sauce
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup coarsely chopped fresh cilantro
6 (6 ounce) mahi mahi fillets, with skin 1 to 1 1/2 inch-thick

Steps:

  • Cook garlic and shallots in 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring, until softened, 3 to 5 minutes.
  • Add chiles and pineapple, then sauté over moderately high heat, stirring occasionally, until pineapple is softened, 4 to 5 minutes.
  • Add fish sauce, sugar, and salt and sauté sambal, stirring, 30 seconds.
  • Cool to room temperature, then stir in cilantro.
  • Brush fish all over with remaining tablespoon oil, then season with salt.

I just returned from a fabulous trip from Hawaii, and I wanted to figure out a way to make a dish that reminded me of all of the island flavors-- here is the result! Mahi Mahi is a great Hawaiian fish that is easy to find here in the States (as opposed to Opah or Ono fish which are delicious but impossible to find here...). I also wanted to try making a pineapple salsa after visiting the Dole Pineapple Plantation, and it turned out really well-- sweet and spicy! I hope you enjoy this one! Aloha!

1 whole pineapple
1/4 cup red onion, minced
1 green onion, thinly sliced
1 serrano chili, minced
1 cup cilantro leaf, coarsely chopped
1 tablespoon lime juice
1/2 teaspoon garlic salt
freshly ground black pepper
1 cup roasted and salted macadamia nut
1/2 cup seasoned breadcrumbs
3 tablespoons shredded coconut
1 egg, beaten
1 tablespoon extra virgin olive oil
1 tablespoon butter
4 mahi mahi fillets (about 6 oz each)

Steps:

  • To make the salsa, prepare the pineapple by slicing off the top and the bottom, and cutting off the sides to remove all of the skin. Cut the peeled pineapple into 4 sections lengthwise, and remove the woody core in the middle. Dice the pineapple into 1/2 inch chunks.
  • Combine the diced pineapple with the remaining salsa ingredients and set aside.
  • In a food processor, finely grind the macadamia nuts. Mix well with the breadcrumbs and coconut.
  • Heat the butter and olive oil over medium/ medium-high heat. Dip the mahi mahi fillets in the egg mixture, then coat well with the nut mixture. Fry for about 3-5 minutes on each side, or until cooked through and crispy on the outside.
  • Top with the pineapple salsa.

12 ounces mahi mahi fillets
1/2 cup pineapple chunk
1/2 cup salsa (preferably fresh)
1 teaspoon cornstarch
1 teaspoon horseradish
1 teaspoon honey mustard
garlic-flavored non-stick spray
1/4 teaspoon lemon pepper

Steps:

  • Chop pineapple into small pieces.
  • Combine with salsa, cornstarch, horseradish and honey mustard.
  • Coat both sides of fish with cooking spray.
  • Sprinkle fish evenly with lemon pepper.
  • Preheat large saute pan on medium-high.
  • Cook fish 3 minutes; turn.
  • Add salsa to one side of the pan & stir often to evenly heat.
  • Reduce heat to medium, and simmer 5-6 minutes or until flesh is opaque & separates easily with a fork.
  • Serve fish and sauce over prepared long grain rice.
