Aloha Sausage and Peppers image

This meal came about last night because I WAS planning to make stuffed chicken breasts but I had NO chicken! I did not want to run to the store so I just rummaged through the freezer and fridge and this was the result. 5 evergood pineapple sausages
2 red bell peppers
2 orange or yellow bell peppers
1 sweet onion, such as walla walla or vidalia
1 Tbsp olive oil
6 Tbsp red pepper jelly, i used trader joe's
2 Tbsp orange juice
salt and pepper, to taste, if desired.

Steps:

  • 1. This is really easy and quick because the Evergood sausages are already cooked. Here goes...
  • 2. Remove the seeds and veins from the peppers and cut into about 1 inch slices Peel and slice the onion into 1 inch slices. Heat oil over medium heat in a large skillet. Add the peppers and onions (I added a bit of salt and pepper here) Cook until almost tender-crisp.
  • 3. While veggies are cooking slice the sausages into 1 inch slices. I sliced them on the bias. Makes the pieces look nice and much larger. When veggies are crisp-tender add the sliced sausages to the pan. Continue to cook until sausages have browned a bit. Stir and flip as needed. This may sound long, but it was really only minutes!
  • 4. When the sausages have browned, plop in the pepper jelly and the orange juice. Turn heat to low and stir to combine as the jelly and juice create the sauce. That's it! Time to eat!
