One 46-ounce bottle pineapple juice
1 cup sweetened coconut drink, such as Silk or Coconut Dream
1 cup orange juice
24 maraschino cherries
12 pineapple spears
Prosecco or sparkling water, for topping

Steps:

  • Mix the pineapple juice, coconut drink and orange juice in a large pitcher and refrigerate until well chilled. Thread a cherry, pineapple spear and a second cherry on each of 12 decorative cocktail toothpicks; refrigerate until ready to serve.
  • To serve: Fill a champagne flute one-third of the way with the pineapple juice mixture and top up with prosecco or sparkling water. Garnish with a pineapple cherry spear.

2 cups raspberries, plus more for serving
2 cups pineapple juice
1 teaspoon pure vanilla extract
1 bottle (750 milliliters) chilled brut sparkling white wine
1 cup chilled seltzer

Steps:

  • Blend raspberries, pineapple juice, and vanilla until smooth. Strain through a fine-mesh sieve, pressing on solids; pour into a pitcher. Top with wine. Let foam settle; top with seltzer and stir gently to combine. Put a few raspberries in each glass, pour, and serve.

  • Place raspberries in a blender; cover and process until pureed. Press through a fine-mesh strainer into a bowl; discard seeds. 1 bag frozen unsweetened raspberries, thawed
2 tablespoons sugar
1 bottle (750-ml) chilled brut Champagne

Steps:

  • Blend the raspberries and sugar in a food processor or blender until pureed. Strain the raspberry puree through a sieve; discard the seeds, if you wish. Set up 6 Champagne flutes and put about 1 tablespoon of raspberry puree in each glass. Add Champagne to each glass; stir gently and serve.
