Pineapple muffins are delicious with your breakfast coffee. Slather them with butter and eat hot from the oven for a morning treat your family will love. The almonds on top and the blueberries just make these wonderful muffins.

2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup or 8 tablespoons or 1 stick butter (softened)
3/4 cup white granulated sugar
2 eggs
1/4 cup milk
1 8 ounce can crushed pineapple, drained (save juice
1/2 cup pineapple juice
1 cup fresh blueberries (can use frozen, no need to thaw)
1 teaspoon vanilla extract
1/2 cup chopped almonds (could use pecans or walnut)

Steps:

  • Whisk together flour, baking powder and salt in a large bowl. Cream butter, sugar and eggs with mixer. Add milk, vanilla extract and pineapple juice and using mixer combine with flour mixture. Fold in pineapple and blueberries. Mix with spoon.
  • Spray a 12 cup muffin pan with cooking spray. Fill cups almost to top and sprinkle on chopped almonds. Bake in preheated 400 degree oven for 20 to 25 minutes until centers test done.

Number Of Ingredients 10

1 can (8 ounces) crushed pineapple
1-1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs, room temperature
1/2 cup vanilla yogurt
1/4 cup canola oil
5 teaspoons brown sugar
18 to 20 maraschino cherries, halved

Steps:

  • Preheat oven to 400°. Drain pineapple, reserving 1 tablespoon juice. Set pineapple aside., In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk eggs, yogurt, oil and reserved pineapple juice. Add to flour mixture; stir just until moistened. Fold in reserved pineapple., Fill greased mini-muffin cups two-thirds full. Sprinkle tops with brown sugar; top with halved cherries., Bake 9-12 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

1/3 cup packed brown sugar or 3 tablespoons brown sugar substitute blend
2 tablespoons butter, melted
3 canned pineapple slices
CAKES:
1/3 cup butter, softened
1/2 cup sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fat-free lemon or vanilla Greek yogurt
1/4 cup fat-free milk

Steps:

  • Preheat oven to 350°. Coat 12 muffin cups with cooking spray. Mix brown sugar and melted butter; divide among prepared cups. Quarter each pineapple slice; place one piece in each cup. , For cakes, cream butter and sugar until light and fluffy, 3-5 minutes; beat in egg and vanilla. In another bowl, whisk together flour, baking powder, baking soda and salt; add to creamed mixture alternately with yogurt and milk, beating well after each addition. , Fill prepared cups two-thirds full. 1 (10 ounce) can pineapple slices in juice, drained
2 tablespoons brown sugar
2 tablespoons chopped walnuts
½ cup regular rolled oats
¾ cup whole wheat flour
¾ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 tablespoon ground cinnamon
2 eggs
½ cup packed light brown sugar
¼ cup canola oil
2 tablespoons pineapple juice
1 teaspoon vanilla extract
1 (8 ounce) can crushed pineapple
1 cup grated carrot
¾ cup raisins
¼ cup chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease 12 muffin cups. Stack the pineapple slices and cut them into 6 wedges. Set aside.
  • Sprinkle 1 teaspoon of brown sugar into the bottom of each muffin cup. Sprinkle in 1/2 teaspoon of walnuts over the sugar, and then place two wedges of pineapple into each cup. Set aside.
  • In a large bowl, stir together the oats, whole wheat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon. In a separate bowl, whisk together the eggs, 1/2 cup of brown sugar, canola oil, pineapple juice and vanilla. Stir the wet ingredients into the dry just until moistened. Fold in the crushed pineapple, carrot, raisins and walnuts. Spoon evenly into the prepared muffin cups.
  • Bake the muffins until the tops spring back when lightly pressed, about 20 minutes. While the muffins are still hot, loosen the edges from the pan using a small knife and invert onto a serving tray so that the pineapple is on top. Serve upside-down while still warm or at room temperature.

nonstick cooking spray
12 candied cherries
12 pecan halves
3 tablespoons packed light brown sugar
8 tablespoons unsalted butter, melted and cooled
1 (8 ounce) can crushed pineapple in syrup, drained
2 cups all-purpose flour
2 tablespoons all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, at room temperature
3/4 cup buttermilk
1/4 teaspoon almond extract

Steps:

  • Position your oven rack in the center of the oven and preheat to 375°F Prepare the muffin pans by spraying the cups and rims with nonstick spray. If using the silicon pans, spray as directed and put on a cookie sheet.
  • In a small bowl, mix the brown sugar and 2 tablespoons of the melted butter until well combined. Into the muffin cups, place one candied cherry and one pecan half. Then divide the brown sugar mixture even among the 12 cups placing about 1 teaspoon in the bottom of each. Top the brown sugar mixture in each cup with 1 teaspoon of crushed pineapple. Set aside.
  • Whisk the flour, granulated sugar, baking powder, baking soda, and salt until well mixed. Set aside.
  • In a large bowl, whisk the eggs until frothy. Whisk in the buttermilk, the almond extract, the remaining 6 tablespoons of melted butter and the remaining crushed pineapple. Gently stir in the prepared flour mixture with a wooden spoon until moistened.
  • Take care not to disturb the sugar and pineapple in the bottom of the cups, fill them three quarters full with batter. Reserve leftover batter for a second baking. Bake for 22 minutes, or until the muffins are lightly browned with rounded tops. A toothpick inserted into one of the centers should come out with moist crumbs attached to it.
  • Set the pan on a wire rack to cool for 15 minutes. Gently tip each muffin to one side, being careful to keep the pineapple bottom attached. If it comes loose, simply scrape it out, and gently press it back onto the muffin top once the muffin has been removed from the pan. Remove all the muffins, serve them upside down. Cool completely before before sealing them in an airtight container, where they will stay fresh for up to two days. These muffins do not freeze well.

This moist golden morning treat quickly became my husband's favorite. And because it calls for a boxed blueberry muffin mix and canned pineapple, I never have a problem finding the time to make it for him. Plus, it looks pretty enough to serve company.

1 package (18-1/4 ounces) blueberry muffin mix
1 package (1/4 ounce) quick-rise yeast
1 can (8 ounces) sliced pineapple
1 egg, lightly beaten
1/3 cup packed brown sugar
1/4 cup butter, melted
4 maraschino cherries, halved
Fresh blueberries, optional

Steps:

  • Rinse and drain blueberries from muffin mix; set aside. Combine muffin mix and yeast in a large bowl; set aside. , Drain pineapple, reserving juice in a measuring cup. Set pineapple aside. Add enough water to juice to measure 2/3 cup. , Pour into saucepan; heat to 120°-130°. Add to muffin mix; stir just until moistened. Beat in the egg. Cover and let rest for 10 minutes., Combine brown sugar and butter; pour into a greased 9-in. round baking pan. Cut each pineapple slice in half; arrange over brown sugar mixture. Tuck cherries into pineapple. , Spoon half of batter over pineapple. Sprinkle with reserved blueberries. Spread with remaining batter. , Bake at 350° for 40-45 minutes or until a toothpick inserted into cake comes out clean. Immediately invert onto a serving plate. Cool completely. Garnish with fresh blueberries if desired.
