6 plum tomatoes, sliced
1 cup olive oil, divided
10 (6 inch) flour tortillas
1 (8 ounce) jar basil pesto (such as Classico® Traditional)
1 (8 ounce) fresh mozzarella ball, sliced thinly
1 bunch fresh basil leaves

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Spread tomato slices out on baking sheet. Drizzle some olive oil over slices.
  • Broil in the preheated oven until tender, about 6 minutes. Remove from oven and cool until easily handled, about 5 minutes. Peel skin off slices; discard.
  • Preheat oven to 375 degrees F (190 degrees C). Line another baking sheet with aluminum foil.
  • Brush both sides of each tortilla with olive oil and arrange on baking sheet.
  • Bake in the preheated oven until lightly browned and crispy, about 8 minutes. Remove from oven and let cool, about 5 minutes.
  • Spread 2 to 3 tablespoons of pesto in a thin layer over each tortilla. Top with mozzarella cheese slices, 8 basil leaves, and some roasted tomato slices.
  • Bake in the preheated oven until mozzarella cheese is melted, 6 to 8 minutes. Cool slightly, about 2 minutes, before slicing with a pizza cutter.

1/4 cup Basil Pesto, (two cubes defrosted)
2 precooked store-bought pizza crusts (8 inches)
1 sliced plum tomato
2 ounces grated mozzarella cheese
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. Spread basil pesto on each of two pizza crusts.
  • Layer each crust with plum tomato; sprinkle with grated mozzarella cheese. (Or, layer with just cheese, using 3 ounces thinly sliced fresh mozzarella.) Season with coarse salt and ground pepper.
  • Transfer to a baking sheet; bake until cheese has melted and crust is golden brown, about 10 minutes. Slice, and serve immediately.

1 1/2 pints cherry tomatoes, halved (about 3 cups)
1 tablespoon plus 2 teaspoons olive oil, divided
1/4 teaspoon kosher salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
1 (12-14") soft loaf French or Italian bread, split in half lengthwise
1 garlic clove, smashed
1/2 cup fresh ricotta (about 5 ounces)
3/4 cup coarsely grated Parmesan (about 3 ounces)
2 tablespoons fresh store-bought or homemade basil pesto

Steps:

  • Position rack in top third of oven and preheat to 425°F. Toss tomatoes, 1 Tbsp. oil, 1/4 tsp. salt, and 1/4 tsp. pepper on a rimmed baking sheet. Roast until tomatoes start to blister, about 13 minutes.
  • Place bread, cut side up, on another rimmed baking sheet and bake 5 minutes. Remove from oven and rub cut sides with garlic.
  • Dollop ricotta on cut sides of bread. Top evenly with tomato mixture, then sprinkle with Parmesan. Bake until Parmesan melts, about 10 minutes.
  • Whisk pesto and remaining 2 tsp. oil in a small bowl until smooth. Drizzle on pizzas and season with salt and pepper.

2 pizza bases
2 slices ham , roughly torn
½ 250g tub ricotta
1 tbsp fresh pesto

Steps:

  • Heat oven to 220C/200C fan/gas 7. Place a flat baking sheet in the oven to heat up. Spread 2 tbsp tomato sauce on each pizza base. Carefully slide the bases onto the baking sheet and cook following pack instructions.

1 pkg 12 oz.mama mary's original 3 pizza crusts
1 pkg 16 oz. deli marketside spinach artichoke dip
1 can(s) great value canned chunk chicken breast
2 tsps classico traditional basil pesto sauce and spread
italian seasoning-sprinkle on desired amount
garlic powder-sprinkle on desired amount-i used a small dash or so.
grated parmesan cheese. sprinkle desired amount
1 bag(s) kraft italian 5 cheese(shredded)
crisco 100% canola oil-no stick spray

Steps:

  • 1. Pre-heat your oven to 350 degrees. Get out your pizza pan and cover with foil. I do this because it helps later,with the clean up.
  • 2. Spray the foil with no stick spray.Put the 3 pizza crusts on pizza pan and use the no stick spray on the crust.Sprinkle on crust,garlic powder,italian seasoning and grated parmesan cheese. Use the amount you desire,all taste are different.
  • 3. Add 1 to 2 tsp. pesto sauce on each crust and carefully spread evenly over crust.
  • 4. Add 1 to 2 tsps. of your spinach artichoke dip to the crusts and in a circular motion spread evenly to cover crust.
  • 5. open the canned chicken,pour off juice for another use and put chicken in the bowl and with a fork, mash it up some. Add the chicken on top of spinach artichoke dip,there will be enough for the 3 pizzas.
  • 6. Now the final step- Add your Kraft italain 5 cheese shredded cheese to the chicken,cover evenly. If so desired, sprinkle on alittle more italian seasoning before baking.
  • 7. Bake in your pre-heated oven(350 degrees)for 10 to 15 minutes or until cheese is melted. Take out of oven and cool a few minutes. Slice and enjoy.

Thiese are a fun appetizer which take no time. You can grill the bread which is what I like or you can just grill the bread right in the oven. The bread is the only thing grilled with the pesto and the ricotta and cheese mix is chilled. It is a very light easy appetizer which always goes over well. Some fresh basil makes for a very pretty presentation and using store bought small pizza crusts makes it even easier. Now if you want to make your own small pizza crusts ... go right ahead. I have when I have time. Most often I don't, but thin thin store bought crust are not all that bad.

1 medium avocado, peeled and pitted

Steps:

  • Heat a skillet over medium heat. Add pistachios; cooking, shaking often, until toasted, about 5 minutes.
  • Make the pesto by combining the pistachios, avocado, basil leaves, Parmesan, garlic, salt and pepper in a blender. Pulse until the mixture is roughly chopped and then with the blender running, slowly stream in 1/4 cup olive oil. Continue blending until the pesto is a thick paste, scraping down the sides of the blender as needed. Set the pesto aside.
  • Preheat the grill for 10 minutes on medium heat. Spread the butter on the corn, then wrap each ear of corn in Reynolds Wrap® Aluminum Foil. Place the corn on the grill, close the lid and grill the corn, turning it frequently until it is tender, 15 to 20 minutes. Unwrap the corn and when cool enough to handle, slice the kernels off the cob.
  • Brush both sides of the flatbreads with 2 tablespoons olive oil and grill them for 1 to 2 minutes on each side to warm them. Remove the flatbreads from the grill and top with the avocado pesto, Gruyere, mozzarella, red onions and corn.
  • Return the flatbreads to the grill, close the lid and grill until the cheese is melted, about 3 minutes.
  • Remove the flatbreads from the grill and transfer them to serving plates. Top the flatbreads with arugula and crushed red pepper flakes (optional) and then slice and serve immediately.
