My husband's quest to find a recipe which produces light, fluffy (rather than solid and dense) spelt bread from a bread machine has finally paid off. He did lots of experimenting, and this one has produced consistently good results. Update: can't see how to respond to the review which found the bread heavy, so responding here. If you definitely used WHITE spelt flour, not wholewheat, then it sounds as though perhaps different bread machines get different results? :-( However, there is one other possibility. Did you use fast action dried yeast, suitable for breadmakers? Or Dried active yeast which is for hand baking? We were using the former. The other thing my husband suggested trying, if you're using the correct flour and yeast, is to try upping the amount of yeast you're using, and see if that helps. You could also try upping the amount of water slightly, but try each solution separately first :-) My husband's number one rule, stemming from his scientific background :-) Hope one of these tips work, and not that it is the bread machine themselves (ours is a Panasonic SD255)

2 cups white spelt flour
2 cups wholemeal spelt flour
2 1/2 teaspoons fast-rising active dry yeast (6g)
1 1/2 cups tepid water
1 teaspoon salt
2 tablespoons sugar
2 tablespoons vegetable oil

Steps:

  • Add water to bread machine, then oil, then flour, then salt, then sugar, then yeast.
  • Set on "Normal" setting (which is 4 hours), with small loaf and light crust settings.
  • NB: If you use wholegrain spelt rather than wholemeal, then reduce the yeast to 1.5 slightly rounded teaspoons (about 3.5g).

I found this recipe somewhere on the internet years ago and it is the best spelt bread recipe I have ever used. I am putting it on here so that I won't lose it. I get lovely light perfectly raised loaves of bread each time I make it. The trick with spelt is to NOT over knead it. When using wheat flour it is almost impossible to knead "too long" but with spelt flour if you knead too long your finished loaves will come out heavy and crumbly. Remember to add the flour gradually and only use enough that you don't actually stick to everything as you knead. I usually add the last cup or so a bit at a time so I can stop when I think the dough has enough flour. Hope you enjoy it! For a lighter flavour and texture, use up to 50% white spelt flour. NOTE: IT IS IMPORTANT THAT YOU DON'T OVER-KNEAD SPELT DOUGH!

1 tablespoon active dry yeast
2 cups warm water (105F - 110F)
3 tablespoons honey
3 tablespoons butter, melted
2 teaspoons sea salt
6 cups spelt flour (use any combination of whole or white spelt.)

Steps:

  • Combine the yeast, water and honey in a large warm bowl. Let stand for 10 minutes or until the yeast softens.
  • Stir in the butter and salt and 3 cups of flour. Stir vigorously with a wooden spoon.
  • Add the remaining flour in increments until the dough become too stiff to stir, then place the dough on a lightly floured surface.
  • Knead for about 6 minutes, adding the remaining flour as necessart, until the dough become smooth and elastic. Do not overknead!
  • Place the dough in a lightly greased bowl. Cover and let rise in a warm, draft-free spot for about 2 hours or until doubled in bulk. (I find that sometimes it only takes an hour, make sure to check!).
  • Grease two 8 1/2" x 4 1/2" loaf pans. Punch the dough down to deflate it and divide it in half. Form each half into a smooth loaf and place in a prepared pan.
  • Cover and let rise in a warm draft-free spot for about 1 hour or until the dough has risen to the top of the pans. (Again, I find that it seems to take less time than listed here.).
  • Preheat the oven to 350°F.
  • Uncover the risen loaves. Place the pans on a heavy baking sheet and bake for 45 minutes or until the tops are light brown and crusty. Remove from the oven and tap out of the pan into the baking sheet. Turn the oven off and return the breads to the oven to crisp for 5 minutes. Remove from the oven and let cool on a wire rack.

A delicious whole grain bread which is also great for people who can not tolerate wheat. Spelt flour can be found at Health food stores, I use Vita Spelt and I have them order a twenty-five pound bag for use in all of my baking. I got the original recipe out of a friends "Breadman" cookbook, but I have modified it slightly over the years.

1 1/2 teaspoons salt
2 tablespoons canola oil
3 tablespoons honey
3 1/2 cups whole grain spelt flour
1 3/4 teaspoons bread machine yeast

Steps:

  • Put the ingredients into your machine in the listed order.
  • Choose setting on bread machine: light crust, 1.5 pound loaf, either the rapid wheat or whole wheat settings work just fine, depending on how much time you have. After the flour has been added, make a depression in the flour to hold the yeast until mixing begins.

1 1/2 Teaspoons salt
2 Tablespoons olive oil
3 Tablespoons sugar
3 1/2 Cups spelt flour
1 Tablespoons vital wheat gluten
1 3/4 Teaspoons bread machine yeast

Steps:

  • This is a recipe for a two-pound machine. Note that you'll be using the whole wheat setting.
  • Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first.
  • Check on the dough after five or ten minutes of kneading. It should be a smooth, round ball.
  • If the dough is too dry add liquid a teaspoon at a time until it looks right. If it looks too wet, add flour a tablespoon at a time until it looks good.

This basic recipe is from Arrowhead Mills. The taste by itself is wonderful and works well when paired with salty or sweet foods/spreads. I've started to add different combinations or herbs, cheeses, and ground chia seeds into the mix as well. It's a great recipe to experiment with. I've found that the nutrient-rich bread itself is rather filling, so the loaf lasts somewhat longer than expected.

1 (1/4 ounce) package active dry yeast
1 cup warm water
2 tablespoons honey
2 tablespoons vegetable oil
1 teaspoon sea salt

Steps:

  • OVEN INSTRUCTIONS: Dissolve yeast in honey with vegetable oil and water.
  • Add salt and 1 1/2 cups of spelt flour. Beat well for 3-4 minutes.
  • Cover with damp cloth and let rest in a warm place for approximately 30 minutes or until double in size.
  • Add remaining flour, turning onto floured board and knead until smooth, adding flour if necessary.
  • OPTIONAL: Add desired additional ingredients to taste. This is where I tend to add small amounts of herbs (such as basil and/or rosemary), chia seeds (usually ground), and/or grated parmesan/asiago cheese.
  • Place in oiled loaf pan and cover with damp cloth. Let rise in warm place until double in size (approximately 30 minutes).
  • Bake at 350 degrees for 30-40 minutes or until golden brown.
  • BREAD MACHINE INSTRUCTIONS: Add ingredients to machine according to manufacturer's instructions.
  • Bake on shortest cycle (NOT quick bread cycle).
  • If loaf falls and craters during baking cylce, decrease water slightly next time.

Original recipe from this website - Softest Ever Bread Machine Bread by KC_Cooker, modified to use spelt flour, and my Black & Decker Bread machine with a 3 lb. loaf pan. This loaf almost fills the pan. Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. I doubt this recipe would work on a super rapid cycle. (Note on nutrition values: the nutrition values for the spelt flour is not included in the nutrition table. It appears Food.com does not have spelt flour in their database.)

1 cup warm water (110 degrees F/45 degrees C, microwave approx. 50 seconds with room temperature water)
2 tablespoons white sugar
2 teaspoons instant yeast
4 tablespoons vegetable oil
3 cups spelt flour (light or all-purpose)
1 teaspoon salt

Steps:

  • Place the water, sugar and yeast in the loaf pan of the bread machine.
  • Let the yeast dissolve and foam for 10 minutes.
  • Add the oil, flour and salt to the loaf pan.
  • Select the Rapid Bake, Light Crust setting, and press Start.
  • Help unstuck any flour from the sides during the first mix cycle. Add additional flour or liquid, if needed. I didn't need to.
  • My bread machine has a 7 minute power failure backup feature. I unplug the bread machine during the last rise cycle for 5 minutes. This gives a lighter loaf when finished.
  • When baked, the internal temperature should be between 190°F and 200°F.
  • When finished baking, let cool 1 hour on a rack before storing in a plastic bag (I use a zip-lock). The loaf can be sliced and frozen, if desired.
