CREAMY SAUSAGE PASTA

4 cups penne noodles
1 teaspoon salt (more to taste)
1 teaspoon olive oil
1 pound ground Italian sausage (spicy or mild, your preference)
2 tablespoons butter
3 teaspoons minced garlic
½-1 cup sliced mushrooms (see note)
1 cup reduced sodium chicken broth
1 cup heavy cream
cracked black pepper (to taste)
¼ cup grated parmesan cheese (optional)
fresh parsley or thyme for garnish (optional)

Steps:

  • In a deep skillet, or pot, bring 4 cups water to a boil. Stir in penne noodles along with 1 teaspoon salt. Boil 6-9 minutes until fork-tender. Drain, toss with 1 teaspoon oil, and set aside.
  • In the same skillet you used for the pasta (or a new one if you used a pot) cook sausage over medium-high heat, breaking up with a spoon or spatula as it cooks, for 6-8 minutes or until completely browned. Use a slotted spoon to transfer to a bowl and cover to keep warm.
  • Reduce heat to medium and add butter to the pan. Once melted, stir in garlic 1-2 minutes til fragrant. Add mushrooms and saute 3-4 minutes until very tender.
  • Stir in chicken broth and heavy cream and simmer over medium-low heat until reduced (about 5-10 minutes).
  • Stir in cooked sausage and noodles. Season with salt and pepper to taste. Top with parmesan and parsley or thyme if desired and serve.

1 tablespoon butter
1 tablespoon olive oil
1 medium onion, thinly sliced
3 garlic cloves, minced
1 pound sweet Italian sausage, casings removed
2/3 cup dry white wine
1 14 1/2-ounce can diced peeled tomatoes with juices
1 cup whipping cream
6 tablespoons chopped Italian parsley
1 pound penne pasta
1 cup freshly grated Parmesan cheese

Steps:

  • Melt butter with oil in heavy large skillet over medium-high heat. Add onion and garlic and sauté until golden brown and tender, about 7 minutes. Add sausage and sauté until golden brown and cooked through, breaking up with back of spoon, about 7 minutes. Drain any excess drippings from skillet. Add wine to skillet and boil until almost all liquid evaporates, about 2 minutes. Add tomatoes with juices and simmer
  • 3 minutes. Add cream and simmer until sauce thickens slightly, about 5 minutes. Stir in 4 tablespoons parsley. Season to taste with salt and pepper. Remove from heat. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain pasta; transfer to large bowl.
  • Bring sauce to simmer. Pour sauce over pasta. Add 3/4 cup cheese and toss to coat. Sprinkle with remaining 1/4 cup cheese and 2 tablespoons parsley.

1 Pound Penne Pasta
1 Tablespoon Olive Oil
1/2 Yellow Onion (Minced)
2 Cloves Garlic (Minced)
1/2 Teaspoon Red Pepper Flakes
1/2 Teaspoon Salt
2 Cups Heavy Cream
5 Ounces Baby Spinach
1 Cup Shredded Parmesan Cheese

Steps:

  • Cook the penne pasta in a large pot of salted boiling water according to package directions.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
  • Cook the Italian sausage along with the onion, garlic, red pepper flakes, and salt until the sausage is no longer pink.
  • Drain excess fat from the skillet if necessary and return the meat mixture to the pan.
  • Turn the heat to low and add the cream to the skillet. Bring to a simmer and add in the spinach.
  • Cook, stirring for about 3 minutes until the spinach is wilted.

1 lb penne pasta, dry
1 lb sweet Italian sausage link
2 tablespoons butter
3 garlic cloves, chopped
salt
fresh coarse ground black pepper
red pepper flakes
3 tablespoons all-purpose flour
1 1/2 cups milk
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 cup fresh grated parmesan cheese
3 scallions, chopped

Steps:

  • Remove sausage from casing if necessary and brown in 1 tbsp butter, preferably in a large wok or sauce pan.
  • Meanwhile, cook penne in boiling salted water.
  • Add chopped garlic to sausage and sauté 1-2 minutes.
  • Add salt and black& red peppers.
  • Add additional 1 tbsp butter and melt.
  • Sprinkle with flour; stir well to ensure flour is absorbed.
  • Add milk and bring to boiling.
  • When the mixture starts to boil, reduce to low heat, add herbs and parmesan, and stir well.
  • Simmer on low heat 2-5 minutes, stirring frequently (to desired thickness).
  • Drain pasta and add to wok/skillet; stir to coat with sauce and heat through.
  • Top with chopped fresh scallions and additional red pepper flakes and/or grated parmesan if desired.
