CARAMEL PEAR PUDDING CAKE
This is the most delicious dessert, and easy to put together, a great ending to any meal. This can also be made with apples, but use a firm apple such as Granny Smith for this recipe. I usually stick this in the oven, and bake it as we are having dinner, and serve it with ice cream as a topping...so yummy!

Steps:
- Set oven to 375 degrees.
- Lightly spray a 2-quart casserole dish with cooking spray.
- In a large mixing bowl, mix together flour, white sugar, baking powder, cinnamon and salt.
- Add in the milk; beat until smooth (add a little more milk or cream if the mixture is too thick).
- Stir in the chopped pears and pecans.
- Transfer to the prepared casserole dish.
- In a bowl, combine the brown sugar, butter and boiling water; (this mixture will be thin, but will incorporate into the cake while baking) mix well, pour evenly over the batter.
- Bake for 35-40 minutes.
- Serve hot with ice cream or Cool Whip topping (I prefer it with vanilla ice cream!).
AUTUMN PEAR / APPLE PUDDING CAKE
This is an easy and popular reciepe, unique if you make it with pears. My family gobbles it up in less time than it takes to make. Great recipe to take to a covered dish gathering.

Steps:
- Choose pears or apples, if you pick pears use the ginger, for apples use the cinnamon.
- There are two parts to this recipe, the cake and the topping.
- To make the cake: Lightly grease an 8-inch square or 9-inch round pan.
- Place the fruit in the pan, and sprinkle it with the lemon juice.
- In a medium-sized bowl, cream together the butter, sugar, baking powder, spice, and salt till smooth.
- Beat in the egg, then add the flour alternately with the milk (1/2 cup flour, the milk, remaining 1/2 cup flour), beating after each addition.
- Spoon the batter over the fruit in the pan, spreading it to mostly cover.
- To make the topping: Whisk together the sugar, cornstarch, salt, and spice.
- Sprinkle this mixture over the batter, then carefully pour the hot water over all.
- It will puddle on top; that's OK.
- Bake the cake in a preheated 375°F oven for about 60 minutes, until it's nicely browned on the top.
- Remove it from the oven, and serve warm with vanilla ice cream or whipped cream.
- Yield: 8 to 9 servings.
PEAR PUDDING CAKE (OR APPLE, PEACH...) IN CROCK-POT
This is a simple crockpot recipe I got from another mom. If your crockpot cooks hot, I recommend a shorter time and checking it periodically. I did mine on high and it started burning around the edges at 2 1/2 hours. All I had to serve with it was powdered sugar and my 5 yo gobbled down 2 pieces, asking for more!

Steps:
- Lightly butter a 4-5 crock slow cooker.
- In a large bowl combine sugars and baking mix.
- In a separate bowl beat the eggs lightly and stir in milk, melted butter, vanilla & cinnamon. Stir to combine then pour into dry ingredients.
- Add the pears last and gently stir.
- Pour batter into the slow cooker. Cover with a thick clean dish cloth (to absorb the moisture).
- Cook on low for 6 hrs or high for 3 hours.
- Serve warm w/ice cream or whipped topping -- YUM!
PEAR PUDDING CAKE
This cake recipe was given to me when I was cooking for the High School in Stayton, Ore. The original recipe served 96 portions and was baked into two 18" x 26" x 2" pans. I thought it was so good that I sized it down to a 9 x 13 pan and cut it 4 x 6 and it serves 24 portions. I'm going to try and put a picture of the original...

Steps:
- 1. Turn oven on 350* Cream sugar and shortening with the 1 tablespoon of oil. Add eggs, mix until smooth. The dough will be thick, but will thin out when you add the pears.
- 2. In a medium bowl combine the flour, soda, salt, allspice, cloves and cinnamon. Add to creamed mixture and blend well. Fold in pears.
- 3. Pour into greased and floured 9 x 13 baking pan. Bake at 350* for 25-35 min or until done. Cool:
