This is a restaurant-quality dish that is not only easy but so delicious, it's an elegant dish to serve at a dinner party. This recipe can easily be doubled and baked in a larger baking dish or a shallow roasting pan. 2 cups shredded cheddar cheese
1/3 cup grated parmesan cheese
2 cups half-and-half cream
1/4 cup flour
1/4 cup water
2 (10 ounce) packages frozen chopped spinach (hand-squeeze out excess moisture)
4 halibut steaks (about 6-ounces each)
1/4 cup melted butter (or as needed)
seasoning salt (to taste, or use white salt)
black pepper (to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a heavy-bottomed saucepan over medium-low heat stir together the half and half cream with cheddar cheese and Parmesan cheese until melted and smooth; mix in the flour and water stirring constantly until thickend and smooth; remove from heat.
  • Sprinkle the spinach evenly into the baking dish.
  • Brush the halibut on both sides with melted butter, then season with seasoned salt (or white salt) and black pepper on both sides.
  • Place the halibut steaks over the spinach, then pour the cheese sauce over the halibut.
  • Bake 35-40 minutes or until fish flakes easily with a fork.
  • Divide onto four plates.
  • Delicious!

1 red onion (halved and slivered)
1 yellow bell pepper (stemmed, seeded, julienned)
1 red bell pepper (stemmed, seeded, julienned)
1 green bell pepper (stemmed, seeded, julienned)
1 chile manzano (stemmed, seeded, julienned)
1 jalapeño (sliced into rounds)
1 cup peanut oil (plus more for searing the fish)
2 tablespoons toasted sesame oil
1 cup white wine vinegar
1/4 cup brown sugar or grated piloncillo
1 cup fish (chicken, or vegetable broth)
2 teaspoons kosher or sea salt (plus more to season the fish)
2 tablespoons freshly squeezed lime juice
6 6-oz halibut (rockfish or red snapper fillets (or any mild white fish))
1 cup fresh basil leaves (thinly sliced, for garnish)
Corn tortillas (for serving)

Steps:

  • To make the five pepper sauce: Place the red onion, bell peppers, chile manzano and jalapeño in a medium heatproof bowl and set aside. Heat the peanut oil and sesame oil in a saucepan set over medium heat for a couple minutes. Once hot, pour in the vinegar, stir, and cook for a minute. Add the sugar, stir, and cook until it completely dilutes. Add the broth and the salt, stir, and cook for another 3 to 4 minutes, until the liquid has reduced and thickened. Remove from the heat. Pour it over the vegetables while hot. Add the lime juice, taste for salt, stir and let sit while you cook the fish.
  • Heat a couple tablespoons of peanut oil in a nonstick skillet set over medium-high heat. Season the fish fillets with salt and pepper to taste. Sear the fish for 5 to 6 minutes per side, depending on the thickness of the fish, or until it can be flaked with a fork.
  • Transfer the fish to a platter and dress with the five pepper sauce. Serve with warmed corn tortillas.

Steps:

  • Precalienta la parrilla a fuego medio-alto. Corta cuatro hojas de 18 pulgadas de largo de papel de aluminio extra resistente (o usa el papel común doble) y con una cuchara coloca 1/2 taza de arroz en el centro de cada una, dejando el papel ligeramente levantado todo alrededor. ¼ cup vegetable oil, divided
1 pound skinless, boneless halibut fillets
1 pinch salt and ground black pepper to taste
1 cup shredded Italian cheese blend
1 egg
¼ cup mayonnaise
¼ cup minced onion
2 tablespoons lemon juice
2 tablespoons panko bread crumbs
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon seafood seasoning (such as Old Bay®)
¾ cup panko bread crumbs

Steps:

  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add halibut fillets; season with salt and pepper. Cook until flesh flakes easily with a fork, about 4 minutes per side. Transfer to a plate; cool until easily handled, about 5 minutes. Flake into small chunks.
  • Mix Italian cheese blend, egg, mayonnaise, onion, lemon juice, 2 tablespoons bread crumbs, Worcestershire sauce, garlic powder, dry mustard, and seafood seasoning together in a large bowl. Gently mix in flaked halibut.

1 lb firm white fish fillet (preferably Halibut)
3 tablespoons butter
2 tablespoons flour
1 cup milk
salt & pepper
1/2 cup parmesan cheese (divided)
10 ounces frozen spinach (drained & squeezed)
1 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
1/4 cup breadcrumbs (dry)
1 teaspoon Old Bay Seasoning

Steps:

  • Melt butter in sauce pan.
  • Add flour.
  • Add milk and stir until thick to make a white sauce.
  • Add 1/4 cup of the parmesan cheese and stir until melted.
  • Add salt and pepper to sauce to taste.
  • Place spinach in bottom of casserole dish.
  • Top with fish fillet(s).
  • Cover with white sauce.

1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Zest of 1 large lemon
1/2 stick unsalted butter, at room temperature
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large cloves garlic, smashed
4 halibut fillets (each 4 to 5 ounces)
1/2 cup grapeseed oil
2 large shallots, cut into rounds, separated into rings
Lemon wedges, for garnish

Steps:

  • For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
  • For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
  • Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
  • Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. Top with a generous dollop of lemon-butter and pile the shallots alongside or scatter around the fish. Garnish with the lemon wedges and serve.

1/2 cup Kalamata olives
2 tablespoon capers, rinsed
2 cloves garlic
1 anchovy fillet
1/2 cup extra-virgin olive oil, plus extra for drizzling
Kosher salt and freshly ground black pepper
1 head fennel, quartered and sliced paper-thin
2 leeks, white parts only, split, thinly sliced, and washed
1 lemon, sliced into thin wheels
Four 4- to 6-ounce halibut fillets
4 tablespoons white wine
1 Calabrian chile, minced
Fresh basil, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the olives, capers, garlic and anchovy to a food processor. Add 1/2 cup olive oil and black pepper to taste. Process to form a silky paste with small pieces of olive and capers remaining, 15 to 20 seconds. Drizzle in more olive oil as needed. Remove the tapenade from the carafe, then drizzle with olive oil and set aside.
  • Drizzle the center of each of 4 large circles of parchment paper with some olive oil, then sprinkle with salt and pepper. Top each piece with a thin layer of fennel and some leeks. Top each with a dollop of the olive tapenade and 2 to 3 lemon slices. Lay the fish on top of the lemon slices and sprinkle with salt and pepper. Fold the parchment in half to cover the fish, then crimp the edges shut, being sure to cover the corner of each previous fold. When you are halfway through folding, add 1 tablespoon of white wine to each packet, then continue to fold until the entire package is formed and closed. Place each packet on a baking sheet.
  • Bake the fish for 8 to 10 minutes. Remove from the oven, then place each packet on a plate. Cut open the top of the paper to expose the fish. Garnish each fillet with the Calabrian chiles and basil. Serve immediately.
