Mushroom Sauce image

Number Of Ingredients 7

3 tablespoons butter
4 tablespoons chopped shallots
1/2 pound mushrooms, sliced
1/2 teaspoon salt
Freshly ground black pepper to taste
1/4 cup dry white wine
1 cup fresh or canned chicken broth

Steps:

  • Melt 1 tablespoon of the butter in a saucepan and add the shallots, mushrooms, salt and pepper. Cook, stirring, for about 5 minutes. Add the wine and broth and reduce by half over high heat.
  • Transfer the mixture to a blender and blend at high speed until smooth. Return the mixture to the saucepan and add the remaining butter. Heat, stirring, until smooth, about 1 minute.
