1/4 cup extra virgin olive oil
1 lemon (grated rind and juice of)
1 tablespoon small caper (baby capers)
1 tablespoon parsley (finely chopped)
freshly ground salt (to taste)
fresh ground black pepper (to taste)
1/4 cup olive oil
4 salmon fillets
250 g green beans (steamed)
extra virgin olive oil (extra for dressing)
800 g potatoes (peeled)
4 garlic cloves (peeled)
1/3 cup extra virgin olive oil
fresh ground salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • For Salmon - combine extra virgin olive oil together with lemon rind, juice, capers and season to taste.
  • Season salmon fillets and panfry in hot pure olive oil for 2 minutes on each side until golden on the outside but still slightly pink in the centre.
  • Dress beans with extra virgin olive oil and season to taste.
  • Garlic Mash - Cut potatoes into chunks and bring to the boil in a large saucepan of salted water.
  • Add garlic cloves and boil for 20 to 30 minutes or until very tender.
  • Drain and mash potatoes and garlic together until smooth.
  • Slowly mix in extra virgin olive oil and season to taste.
  • Serve Panfried Salmon on Garlic Mash drizzled with Caper and Lemon Oil and accompanied with beans.

1/2 pound haricots verts or other green beans, cut into 3/4-inch lengths
1 tablespoon Dijon mustard
1 teaspoon finely chopped shallot
2 tablespoons red-wine vinegar
1 tablespoon extra-virgin olive oil
8 hard-boiled large eggs, chopped
1/2 cup mayonnaise
2 celery ribs, finely chopped (1 cup)
2 tablespoons chopped chives
1 teaspoon grated lemon zest
1 teaspoon fresh lemon juice
4 cups coarsely chopped baby arugula
1/2 pound sliced smoked salmon, coarsely chopped
Equipment:
4 (16-ounce) wide jars or containers with lids
Accompaniment:
bagel chips

Steps:

  • Cook beans in a medium saucepan of boiling salted water (2 teaspoon salt for 2 quarts water), uncovered, until crisp-tender. Drain and transfer to an ice bath to cool. Pat dry.
  • Whisk together mustard, shallot, vinegar, oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper and toss with beans.
  • Stir together eggs, mayonnaise, celery, chives, lemon zest and juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  • Divide arugula among jars and layer beans, salmon, and egg salad on top.

Pan Seared Salmon with Citrus Vinegar Glaze and Green Beans image

4 (6 ounce) portions salmon fillets
Extra-virgin olive oil, for brushing fish
Salt and pepper
1/2 cup dry white wine
1/2 cup balsamic vinegar
2 tablespoons orange juice, a splash
2 teaspoons lemon juice
2 tablespoons brown sugar
1 pound green beans, trimmed
Orange slices or lemon rind

Steps:

  • Preheat a cast iron pan or heavy bottomed skillet over medium high heat. Brush the salmon fillets with oil. Season with salt and pepper. Cook salmon until just cooked through, about 3 minutes on each side.
  • While salmon cooks, bring wine, vinegar, citrus juices and brown sugar to a boil over high heat. Reduce glaze 3 or 4 minutes, until thickened. Remove from heat. Stir in 1/2 teaspoon coarse black pepper.
  • In a second skillet, bring 1/2-inch water to a boil with green beans and pieces of orange and/or lemon rind. Cover the green beans and cook 3 or 4 minutes. Drain the beans and toss with a drizzle of oil (optional) and season with salt and pepper.
  • Drizzle glaze over salmon fillets and serve with citrus green beans.

4 salmon fillets (6 ounces each)
1 tablespoon butter
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
2 tablespoons Dijon mustard
1 tablespoon olive oil
1/2 teaspoon pepper
1/8 teaspoon salt
1 pound fresh green beans, trimmed

Steps:

  • Preheat oven to 425°. Place fillets in a 15x10x1-in. baking pan coated with cooking spray. In a small skillet, melt butter; stir in brown sugar, soy sauce, mustard, oil, pepper and salt. Brush half of the mixture over salmon., Place green beans in a large bowl; drizzle with remaining brown sugar mixture and toss to coat. Arrange green beans around fillets.
