HAWAIIAN CHOW MEIN

1 lb fresh chow mein noodles
1 tbsp sesame oil ((for greasing the tin))
some char siu pork or thinly sliced pork belly ((I used bacon for this one))
1 bag bean sprouts
1 small onion
1 medium carrot
4 stalks scallions
1 stalk celery ((optional - I didn't use it for mine))
2 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp sugar
1 tbsp sesame oil
1 tsp salt
a pinch black pepper

Steps:

  • Preheat the oven to 350F.
  • Line a baking pan with aluminum foil and grease it with sesame oil.
  • Boil water in a pot, add noodles, and untangle them. Once untangled, take them out and put them in cold water. Set aside. (I do this so that noodles won't break into small pieces when mixing everything together)
  • Cut a carrot and an onion into thin slices. Chop scallions.
  • In a large bowl, combine the sauce ingredients together and mix.
  • Combine noodles, vegetables, and 1/2 of chopped scallions into the bowl and mix them all together.
  • Transfer the mixture into the baking pan. Add the rest of scallions and meat (bacon) on top.
  • Cover it with aluminum foil and bake for about 15 minutes.
  • Take the cover off and bake it or broil it for about 10 minutes.

1 lb hamburger, browned
2 cups celery, chopped
1 large onion, chopped
1 (10 3/4 ounce) can cream of mushroom soup
2 cups water
2 1/2 tablespoons soy sauce
3/4 cup raw rice

Steps:

  • Brown hamburger and drain.
  • Mix it all together and bake covered for 1 1/2 hours at 350 degrees or 1 hour at 425 degrees (or until the rice is cooked).

This casserole is easy to assemble, and a great use for leftover chicken. It is even good when my mom forgets to put the chicken in! This recipe calls for Minute Rice as the liquids included in the recipe and cooking time will not work with traditional rice. Prep time does not include time to cook chicken.

2 cups celery, chopped
1 large onion, chopped
3 cups cooked chicken, chopped
1 (24 ounce) can chop suey vegetables, drained
3/4 cup Minute Rice
10 3/4 ounces cream of chicken soup
1 teaspoon salt
2 tablespoons soy sauce
2 cups chicken broth, boiling
5 ounces chow mein noodles (optional)

Steps:

  • Combine all ingredients except broth and noodles in a casserole dish.
  • Pour broth over mixture.
  • Bake 35 minutes unvcovered at 375 degrees.
  • Sprinkle top with desired amount of noodles.
  • Bake 10 more minutes.
  • Celery will be crunchy.
  • Refrigerate leftovers for up to one week.

This recipe is over 30 years old. It has one disadvantage though, when you start to eat it, you can not stop. I have made it for many years and it was loved by every one. Just make sure you have enough for seconds.

1 lb lean ground beef
1/3 cup oil
2 cups chopped celery
1 cup chopped onion
1 green pepper, chopped
1 red pepper, chopped
8 cloves garlic, minced
1 (10 ounce) can cream of mushroom soup
2 1/4 cups boiling water
1 cup raw white rice
1 (8 ounce) can mushrooms (use liquid)
1/2 teaspoon black pepper
4 tablespoons soy sauce (use lite sauce)

Steps:

  • Brown ground beef (drain) Preheat oven to 350F Heat 1/3 cup oil in sauce pan, add next five ingredients and cook gently for 2-3 minutes until soft Pour mushroom soup and boiling water into ovenproof dish (stir together) Add all other ingredients to soup, stirring well.
  • Cover dish and bake in oven for 1 hour.
