Cranberry Goat Cheese Spread image

This is a different type of spread recipe if you're a fan of goat cheese. The flavor of the cheese is mellowed out a little by all the other flavors. Number Of Ingredients 7

1/4 c pine nuts
4 oz chevre (soft goat cheese, usually sold in a log shape)
3 Tbsp plain cream cheese (about 1.5 oz)
1/4 c dried cranberries
3 Tbsp balsamic vinaigrette salad dressing (store-bought or homemade)
1/8 tsp salt
freshly ground black pepper to taste

Steps:

  • 1. Toast the pine nuts. Place on a sheet of aluminum foil and roast in a toaster oven or regular oven at 300 F for about 2 minutes, just until nicely golden brown. Remove.
  • 2. Place toasted pine nuts and all other ingredients into a food processor. Process until mostly smooth.
  • 3. Place in a pretty serving dish. Serve immediately or refrigerate (which will thicken spread somewhat).
  • 4. Serve with crackers, Triscuits, slices of cocktail bread, Melba toast, or cut up veggies of your choice.
