Aahhh another FAV from GOURMET MAGAZINE. PERFECT as a SUMMERTIME GRILL APPY! Have plenty of Crusty Bread to dip into any leftover dressing! NOTE: Number of servings vary on size per lb for shrimp.

Number Of Ingredients 8

3 lbs large shrimp (APPROX.7/8 SHRIMP PER LB)
4 large garlic cloves
3/4 teaspoon salt
5 tablespoons fresh lemon juice
1/2 teaspoon black pepper
3/4 cup olive oil
1/4 cup finely chopped fresh oregano
3 lemons (Cut into 6 WEDGES)

Steps:

  • Clean and Devein Shrimp leaving shells in place.
  • Mince and mash Garlic in a Mortar and Pestle. Place in Blender with Fresh Lemon Juice and Black Pepper until smooth. With motor running, add oil in a slow stream, blending till emulsified. Transfer dressing to a bowl and add in your chopped FRESH OREGANO.
  • Prepare your GRILL (Moderate Heat for GAS and Direct Heat with Med-HOT Charcoal.
  • Toss Shrimp with 1/4 Cup Dressing in a Large Bowl and marinate NO more than 15 minutes(Texture of Shrimp will change if marinated longer!).
  • Brush Lemon wedges with some of remaining dressing and grill till marks appear (approx 5 minutes) then transfer to large patter.
  • GRILL shrimp on lighlty oiled Grill Rack, turning over once till cooked through approx 8 minutes total Transfer to platter with Lemons as grilled ~ Top with remaining dressing!

2 tablespoons fresh lemon juice

1 1/2 cups diced celery (about 3 stalks)

There is something really good about crunchy lettuce and a bright shallot dressing filled with the flavour of dried oregano completed by creamy feta.

Number Of Ingredients 9

2 heads iceberg lettuce, outer leaves removed
1 bunch chives, snipped
1⁄2 bunch dill, fronds picked
50-70 g (1¾ oz-2½ oz) creamy sheep's milk feta (Bulgarian sheep's milk feta works, or even a Danish cow's milk feta would be good too)
30 g (1 oz) thinly sliced shallot
50 ml (1¾ fl oz) agrodolce-style white-wine vinegar (if you can't find that, add 2 teaspoons honey to regular white-wine vinegar)
1 teaspoon salt
1½ teaspoons dried oregano
120 ml (4 fl oz) extra-virgin olive oil

Steps:

  • First, make your vinaigrette. In a small bowl or jar with a lid, combine the shallot, vinegar and salt. Leave to macerate for about 15 minutes. Next, add the oregano and olive oil and mix or shake to combine.
  • Cut your iceberg into thin, long wedges and arrange on a platter. Shake the dressing up just before pouring it over the lettuce. Sprinkle a bit of salt on top, followed by the chives and dill, then shave slices of cheese over the whole thing, or simply crumble it in. Serve immediately.

2 lbs swordfish steaks (about ½ inch thick)
1⁄4 cup extra virgin olive oil
1 tsp kosher salt
½ tsp pepper
1 tbsp grated lemon peel
1 tbsp chopped fresh oregano
Vinaigrette
3 tbsp lemon juice
1 tsp salt
¼ tsp pepper
1⁄3 cup extra virgin olive oil
1 tbsp chopped fresh oregano or thyme
1⁄2 cup pitted black olives
2 cups cherry tomatoes, halved if large
12 sprigs of parsley
1 lemon, cut into wedges or sliced

Steps:

  • 1. Place swordfish in a shallow baking dish. Combine olive oil, salt, pepper, lemon peel and oregano. Rub into swordfish. Marinate 10 to 20 minutes. 2. For the dressing combine lemon juice, salt, pepper, olive oil and oregano. Reserve. 3. Grill swordfish 2 to 3 minutes per side depending on thickness. Place on a platter, spoon olives and tomatoes on and around and drizzle with dressing. Garnish with parsley and lemon.

400 g pumpkin
3 zucchini
2 red capsicums (red peppers)
2 yellow peppers (yellow peppers)
12 green onions, trimmed
salt
150 g feta cheese, crumbled
2 tablespoons baby capers, rinsed and drained
1 tablespoon pine nuts, toasted (optional)
1/2 cup olive oil
2 tablespoons red wine vinegar
2 garlic cloves, crushed
1 tablespoon fresh oregano, finely chopped

Steps:

  • For Oregano Dressing - Place all ingredients in a screw top jar and shake well to combine, set aside.
  • For Vegetables - Peel and thickly slice pumpkin; quarter zucchini length ways; thickly slice both types of peppers (capsicum).
  • Brush vegetables with half the oregano dressing and sprinkle with a little salt.
  • Cook vegetables on heated barbecue grill (medium heat), turning until just tender and with slight char lines. (vegetables can be cooked in batches if your barbecue is small).
  • Arrange vegetables on serving platter and sprinkle with crumbled feta, capers and pine nuts (if using). Drizzle over remaining dressing.
