This is one of my Mum's delicacies. Dad actually taught her how to make it, but now she has taken over and handed it down :) Really has restaurant quality, exotic flavours! I hope you enjoy as much as we do :)

Number Of Ingredients 6

1 (1 1/2-2 kg) corned beef (Silverside)
1 tablespoon balsamic vinegar
2 tablespoons golden syrup (or brown sugar)
1 small orange, quartered (or 1/2 large orange)
6 whole cloves
2 liters water (more if necessary)

Steps:

  • Place all ingredients into a slow cooker or crock pot. Make sure the meat is covered with water (top up if necessary). Cook on low for 8-10 hours or high for 5-6 hours.
  • Or for non crock pot:.
  • First, cover the meat in water (only) and boil for an hour to reduce the salt. Tip the water out then add fresh water and the rest of the ingredients to finish cooking. Bring back to the boil, then reduce heat and simmer for 2-3 hours or until meat is tender.
  • Serve with steamed carrots, broccoli, cauliflower, cabbage etc. with white sauce.

6 pound corned beef
1 pound potatoes (cut in half )
3 carrots (peeled and cut into chunks)
1 white onion (chopped)
1/2 head cabbage (cut into wedges)
4 cups apple juice
1 cup brown sugar
1 tbsp prepared yellow mustard
1 spice packet

Steps:

  • Add carrots and potatoes to bottom of the slow cooker.
  • Place corned beef fat side up on top of the veggies.
  • Mix apple juice, brown sugar and mustard together and pour over corned beef. Sprinkle spice packet over top of corned beef.
  • Cover and cook on low for 8-10 hours or high 5-6 hours.
  • Add cabbage one hour prior to serving.
  • Remove the cabbage, corned beef, potatoes and carrots from the slow cooker. Slice the corned beef against the grain.
  • Place the meat, potatoes and vegetables on a platter and serve with mustard on the side if desired.

1 corned beef brisket
1 quart apple juice
1 cup brown sugar
1 tablespoon prepared mustard
8 small red potatoes
2 medium carrots, pared, and cut into chunks
1 onion, peeled, and cut into eighths
1/2 head cabbage, cut into chunks

Steps:

  • Place all ingredients in a large crock pot (cut meat in half if necessary); stir to mix.
  • Cook on HIGH for 4 to 5 hours or on LOW for 8 to 10 hours.
  • Remove meat and vegetables and some of the cooking liquid.
  • Slice meat thinly across the grain.
  • Serve with vegetables and some of the liquid.

6-oz. can(s) frozen orange juice concentrate, thawed

Steps:

  • 1. Trim excess fat from corned beef. Cover corned beef with cold water and let stand for 30 minutes. Drain thoroughly. cut beef in half to fit into crock-pot. Pour orange juice over meat . Cover tightly and cook for 10-12 hours on low or on high for 5-6 hours. Makes 6-8 servings.

An excellent way to serve corned beef! Smells divine! (You may use the seasoning packet that comes with the corned beef if you prefer.) CROCK POT instructions included.

1 (3 -4 lb) corned beef brisket
1/2 cup light brown sugar, packed
1/2 cup water
1/2 cup brown mustard

Steps:

  • Rinse off the brisket under running water.
  • Trim off excess fat.
  • Place in large stock pot and cover with water. AT this point you may use the seasoning packet that came with the corned beef.
  • Bring to a boil.
  • Lower the heat to simmer.
  • Cook about 3 hours until very tender (skimming fat as necessary). Add more water if needed to keep covered.
  • CROCK POT DIRECTIONS: If desired, cook corned beef in crock pot until tender. Continue on past this point.
  • Preheat oven to 325ยบ.
  • In a sauce pan, combine the brown sugar and 1/2 cup water. Bring to a simmer over medium-high heat.
  • After about 5 minutes, stir in mustard.
  • Continue simmering another 2-3 minutes.
  • Place the brisket on a rack in a roaster.
  • Thinly coat meat with glaze.
  • Put in oven and bake for 30 minutes, reglazing every 10 minutes.
  • Remove from oven and let rest at least 15 minutes.
  • Slice thin to serve.
