Steps:

  • Wash and dry fruit.
  • Place the fruit in a large bowl and set it over a larger bowl full of ice.
  • Give each guest their own paring knife to peel and slice their choice of fruit.

3 cups halved strawberries or chopped pineapple
2 tablespoons sugar
2 tablespoons honey
1 tablespoon fresh lemon juice

Steps:

  • Blend the fruit, sugar, honey and lemon juice with 2 cups ice in a food processor or blender until chunky. Add another 1 cup ice and blend until completely smooth.
  • Pour the mixture into a shallow baking dish and freeze 30 minutes. Scrape the ice with a fork until slushy, then freeze until firm, about 2 more hours. Scoop into paper cups.

Eight 1/4-inch slices ciabatta, cut on the bias
1/4 cup extra-virgin olive oil
1/4 cup plus 1 tablespoon sugar
2 cups ricotta, at room temperature
1/2 teaspoon pure vanilla extract
2 1/2 cups mixed fresh berries or fruit of your choice
Honey, for drizzling
Flaky sea salt, for sprinkling

Steps:

  • Brush the ciabatta slices on both sides with olive oil, then sprinkle both sides evenly with 1/4 cup of the sugar, gently rubbing it in.
  • Heat a large skillet over medium heat. Place the sugared bread in the skillet and cook until golden brown and caramelized on both sides, 2 minutes per side. Remove to a wire rack to cool briefly.
  • In a medium bowl, mix together the ricotta, vanilla and the remaining 1 tablespoon sugar with a rubber spatula. Divide the mixture among the toasts and spread evenly. Top with berries, drizzle with honey and sprinkle with flaky sea salt.

Number Of Ingredients 6

1 cup cold butter, cubed
4 cups all-purpose flour
2 cups vanilla ice cream, softened
1 can (12 ounces) cherry cake and pastry filling
Sugar
Confectioners' sugar, optional

Steps:

  • In a large bowl, cut butter into flour until mixture resembles coarse crumbs. Stir in ice cream. Divide into 4 portions. Cover and refrigerate for 2 hours. , On a lightly floured surface, roll each portion to 1/8-in. thickness. With a fluted pastry cutter, cut into 2-in. squares. Place about 1/2 teaspoon filling in the center of each square. Overlap 2 opposite corners of dough over the filling and seal. Sprinkle lightly with sugar. , Place on ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottoms are light brown. Cool on wire racks. If desired, dust with confectioners' sugar before serving.
