Number Of Ingredients 8

250 g camembert, very ripe
30 g spreadable cheese
75 g butter, soft
1 medium sized onion (or scallions)
some paprika
some salt
some pepper
some beer (German Oktoberfest beer, if possible)

Steps:

  • In a bowl, combine the Camembert, the butter and the spreadable cheese and mix everything with a fork.
  • Mix with an electric mixer now or use an immersion blender.
  • If the spread is too thick, add some of the beer and mix a little more.
  • Spice with paprika to your liking.
  • Add salt and pepper to taste.
  • Cut the onions very finely, either add them to the spread if you want to eat it now or do this step right before you plan to serve the Obatzda.

1 package (8 ounces) cream cheese, softened
1 medium onion, finely chopped

7 ounces camembert cheese (ripe)
2 tablespoons butter (soft)
1/4 cup cream cheese
1 1/2 teaspoons paprika
1/2 teaspoon ground caraway
1/4 teaspoon salt (more to taste)
1/4 teaspoon pepper (more to taste)
1 small onion (finely chopped (optional))
2 tablespoons wheat beer

Steps:

  • Cut the camembert and the butter into small pieces. Add them to a medium-sized mixing bowl and mince them with a fork or with a pastry cutter (works really well).
  • Add the cream cheese, paprika, ground caraway, salt, and pepper and mix well.
  • Now add the finely chopped onion and mix again.
  • Finally add the wheat beer. We usually add two tablespoons, but depending on the consistency of your cheese spread you might want to add slightly more or less. Mix well.
  • Cover the cheese spread and place it in the fridge for at least an hour to chill and allow the flavors to mingle.
  • Before serving, try the spread and add more salt and/or pepper to taste. You can garnish it with some chopped parsley or chives.

9 oz. Camembert/brie cheese (ripe at room temperature)
6 oz. cream cheese (soft)
4 tbsp. butter (soft)
1/2 small red onion ((finely chopped))
1 tsp. paprika powder
1/2 tsp. caraway seeds, whole (or 1/2 tsp. ground caraway seeds)
1/2 tsp. coarse Kosher salt (or 1/4 tsp. fine salt)
1/2 tsp. coarse ground pepper
1 tbsp. beer (or apple juice or milk, (optional))

Steps:

  • Cut Camembert/brie, cream cheese and butter into 1/2 inch cubes.
  • Chop the onion finely.
  • Place all prepped ingredients into a large bowl, add spices, and mash together with a large fork or clean hands until smooth.
  • Add beer, apple cider or milk if you prefer a smoother spread.
  • Place the mixture into ramekins or sturdy muffin liners.
  • Cover with plastic wrap and refrigerate for at least 1 hour or overnight. Keeps in the fridge several days.

1 lb ripe camembert cheese or 1 lb brie cheese, rind removed
1 tablespoon soft butter
1/2 lb cream cheese
2 tablespoons chives, finely chopped, divided
1/4 onion, finely chopped
salt and freshly pepper
paprika
caraway seed
6 -8 tablespoons beer, to taste
onion, finely sliced rings for garnish

Steps:

This is yummy! A Bavarian style cheese spread that works pretty well with any bread, vegetable and, of course, Brez'n (Pretzels). This is the basic version, as there are a lot of regional differences. You can add different herbs such as parsley or chives, scallions and even a tad of beer :). However paprika and carraway seed are a must to make it really Bavarian.

200 g camembert cheese (or Brie Cheese in cubes, full fat works best)
60 g butter (softened)
1 tablespoon creme fraiche
1 onion (small, chopped very thinly)
1 teaspoon caraway seed (pestled roughly or a generous pinch of ground ones)
1 teaspoon sweet paprika
hot paprika, to your liking
salt and pepper

Steps:

  • Cube Camembert.
  • Chop onion very finely.
  • Add butter to a bowl, add cheese and the rest of ingredients and mash thoroughly using a fork until a homogenous spread/consistency is reached.
  • Season with salt and cracked pepper to taste (again).
