ORANGE SODA GRILLED CHICKEN



Orange Soda Grilled Chicken image

This mouth-watering orange soda chicken makes a great family dinner. Perfect for a grilled outdoor meal!

1 (3 1/2 to 4-lb.) whole roasting chicken
1 teaspoon coarse salt
1 teaspoon brown sugar
1 teaspoon chili powder
1/4 cup orange marmalade
1 (12-oz.) clean can orange-flavored carbonated beverage
1/3 cup orange marmalade
Reserved carbonated beverage
2 teaspoons oil

Steps:

  • Heat grill for indirect cooking as directed by manufacturer. Remove and discard neck and giblets from chicken cavity. Rinse chicken and pat dry with paper towels.
  • In small bowl, combine salt, brown sugar and chili powder; mix well. Rub 1 1/2 teaspoons salt mixture inside chicken. Add 1/4 cup marmalade to remaining salt mixture; mix well. Set aside.
  • Open beverage can; measure out 2/3 cup beverage. Set aside 3 tablespoons of the beverage and reserve remainder for another use. Add 2 teaspoons of the reserved orange-flavored beverage to marmalade mixture, stirring until brushing consistency. Spray outside of half-full can of beverage with nonstick cooking spray; set in shallow baking pan. Carefully set chicken cavity over can, pushing until chicken balances in pan. Rub skin of chicken with oil.
  • When ready to grill, use tongs and spatula to remove chicken and can from pan and set on grill for indirect cooking, making sure chicken is balanced. Cover grill. Cook 1 1/4 to 1 1/2 hours or until chicken juices run clear and instant-read thermometer inserted in thickest part of thigh registers 180°F. During last 30 minutes of cooking time, brush chicken with marmalade mixture.
  • With thick hot pads and tongs, carefully remove chicken and can from grill to clean baking pan or platter. Twist can to remove from chicken. Discard any beverage left in can. Let stand 5 minutes before carving. In small microwave-safe bowl, combine 1/3 cup marmalade and remaining 2 tablespoons plus 1 teaspoon carbonated beverage; mix well. Microwave on HIGH for 30 seconds or until warm. Serve marmalade mixture with chicken.

Cooking spray, for greasing the grill or grill pan
6 orange slices
4 ounces bourbon
4 ounces vermouth, such as Carpano Antica
4 ounces Campari

Steps:

  • Preheat a grill or a grill pan over medium heat.
  • Lightly spray the grill rack with the cooking spray. If using a grill pan, heat the pan on medium heat and when hot, spray it lightly with the cooking spray. Place the orange slices on the grill or grill pan. Cook, turning the slices once, until both sides have grill marks, about 2 minutes per side. Remove the orange from the heat and chop 2 of the slices. Set aside.
  • Combine the bourbon, vermouth, Campari and the chopped grilled orange slices in a cocktail shaker with ice and shake well. Fill rocks glasses half way with ice and stir until chilled, about 30 seconds. Strain cocktail mixture into glasses and garnish each with a grilled orange slice.

4 navel oranges, halved
Kosher salt (optional)
1 lime, cut into 6 wheels
1 1/4 cups añejo tequila
6 tablespoons fresh lime juice (from about 2 limes)

Steps:

  • Prepare a grill or grill pan for medium-high heat. Grill orange halves, cut side down, until well browned, 8-10 minutes. Let cool slightly, about 10 minutes. Juice oranges, then strain and discard pulp (you should have about 1 1/2 cups juice).
  • Pour salt onto a small plate, if using. Rub rim of an old-fashioned or rocks glass with lime wheel, then dip into salt.Stir orange juice, tequila, lime juice, and 8 cups ice in a pitcher. Divide cocktails among glasses and garnish with lime wheels.
