I really like this better than the jarred sauces and I know exactly what's in it and don't have to read the label everytime I need enchilada sauce.

1 cup onion, chopped
1/4 cup anaheim chili, chopped
2 garlic cloves, chopped
1 (15 ounce) can tomato sauce
1 1/2 teaspoons dried oregano
3/4 teaspoon cumin
salt and pepper, to taste

Steps:

  • Spray a medium saucepan with spray oil and heat over medium heat.
  • Add onion, pepper and garlic and cook until tender.
  • Stir in tomato sauce, oregano and cumin.
  • Season with salt and pepper to taste.
  • Bring to a boil; reduce heat to low and simmer uncovered for 15 minutes.

I love to make this easy enchilada sauce, it is so worth making this instead of buying a can of enchilada sauce. Perfect sauce to use for making enchiladas or smootherd burritos.

3 tablespoons vegetable oil
1 tablespoon all-purpose flour
1/4 cup chili powder
2 cups vegetable broth
1 (6 ounce) can tomato paste
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
salt

Steps:

  • In a medium saucepan heat oil, add flour and cook for 1 minute while stirring. Add chili powder and cook for 30 seconds while stirring.
  • Stir in broth, tomato paste, oregano, cumin, and salt to taste. Bring to a boil, reduce heat to low and cook for 15 minutes. Use in your enchilada favorite recipe.

¼ cup New Mexico or California chili powder
1 (8 ounce) can tomato sauce
1 ½ cups water
¼ teaspoon ground cumin

salt to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.
  • Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.

1 garlic clove, minced
1 medium onion, chopped
1/2 cup green pepper, slivered
2 tablespoons oil
1 1/2 teaspoons chili powder
1 (28 ounce) can tomatoes, crushed
1/2 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon cider vinegar

Steps:

  • Saute garlic, onion, & green pepper in oil for about 5 minutes until softened.
  • Add chili powder and cook briefly.
  • Add tomato, seasonings, and vinegar; cover & cook for 20 minutes until vegetables are tender.
  • Uncover and cook 10 minutes longer.
  • Puree in the blender or mash with a fork.

Steps:

  • Heat oil with cornstarch in saucepan over medium heat. Cook for 1 minute.
  • Add in chili powder and cook for another minute.
  • Gradually stir in the broth, mixing well with a whisk to make sure you get out the lumps.
  • Stir in the remaining ingredients.
  • Simmer until thickened on low.
