2 cups shredded zucchini
1 cup shortening
1 cup brown sugar
1 cup white granulated sugar
2 eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups chocolate chips
1 cup chopped nuts

Steps:

  • Cream brown sugar, white sugar, shortening, eggs, and vanilla.
  • In a separate bowl, combine shredded zucchini, flour, baking soda, salt, chocolate chips and chopped nuts.
  • Add dry ingredients to wet ingredients, and stir to combine.
  • Drop by teaspoon on a greased baking sheet.
  • Bake in a preheated 350 degree F oven for 15 minutes.
  • Cool on the pan for 3-4 minutes; remove and cool on a cooling rack.

½ cup butter flavored shortening
½ cup white sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 ¾ cups grated zucchini

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually stir into the creamed mixture. Fold in the grated zucchini. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1/2 cup butter (softened)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 cups grated zucchini
1 (11 ounce) bag semi-sweet or milk chocolate chips

Steps:

Mix in flour, cocoa powder, baking soda, baking powder, salt, and cinnamon; stir until combined. Fold in zucchini and mix, then add chocolate chips. Drop large spoonfuls of dough onto cookie sheets.
  • Bake for 8-10 minutes, then let the cookies cool for 5-10 minutes on the cookie sheet before removing them to wire racks.

Number Of Ingredients 12

2 cups finely shredded zucchini
1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 cup chopped nuts
1/2 cup semisweet chocolate chips

Steps:

  • Place shredded zucchini on a clean towel; roll up and squeeze to remove excess liquid. Set aside. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add the eggs, 1 at a time, beating well after each addition. Combine the flour, baking soda, cinnamon, salt, nutmeg and cloves; gradually add to the creamed mixture and mix well. Stir in the zucchini, nuts and chocolate chips. , Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375° until lightly browned, 10-12 minutes. Remove to wire racks to cool.
