Simple basic weeknight dinner. There's a mixture of pork and turkey to keep it meaty and flavorful. But you can use all ground turkey if you like. The football shape is perfect for a game night.

8 ounces lean ground pork
8 ounces lean ground turkey
1/3 cup old-fashioned oats
4 tablespoons ketchup
1 tablespoon spicy brown mustard
1 teaspoon soy sauce or Worcestershire sauce
1/2 teaspoon finely chopped fresh oregano, plus more for garnish, optional
2 large egg whites
1 medium red onion, grated (about 1/3 cup)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  • Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.
  • Form the meatloaf mixture into 4 small football-shaped loaves, about 4 inches long and 1 1/2 inches thick, and place on the prepared pan. Stir together the remaining 2 tablespoons ketchup and 1/2 tablespoon mustard in a small bowl. Brush some of the ketchup mixture on each meatloaf.
  • Bake until fully cooked, about 20 minutes. Garnish with additional fresh oregano if desired, and serve.

500 g ground lean pork
1/2 small onion, finely chopped
1 small apple, peeled and finely grated
1 tablespoon finely chopped fresh parsley
1 clove garlic, crushed
1 egg, lightly beaten
1 cup stale breadcrumbs
1/4 cup barbecue sauce

Steps:

  • Lightly grease four holes of a 1 cup capacity muffin pan.
  • Combine mince, onion, apple, parsley, garlic, egg and breadcrumbs in a large bowl, using hands, mixing well.
  • Press mixture firmly into prepared pan holes.
  • Cook in moderate oven for 20 minutes.
  • Turn out the meat loaves, draining away any excess juice.
  • Place meat loaves onto a greased oven tray.
  • Spread barbeque sauce evenly over tops.
  • Cook meat loaves in a hot oven for a further 15 minutes or until browned and cooked through.

3 to 4 tablespoons packed brown sugar
1 teaspoon ground mustard
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves. Transfer to freezer container; close and freeze for up to 3 months. , To use frozen meat loaves: Completely thaw in the refrigerator. Place loaves in a greased baking dish. 1/2 cup onion, chopped
1 egg
1/2 cup dry breadcrumbs
1/4 cup milk
1/2 cup parmesan cheese
1 tablespoon parsley
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup ketchup

Steps:

  • Crumble meat in a large bowl. Add chopped onion.
  • Beat egg slightly, then add bread crumbs, milk and parmesan cheese. Mix all together with beef.

Found in a booklet from Pillsbury. Very tasty and easy. The ranch dressing mix is a bit salty so, if you prefer, you can use less.

1 lb lean ground beef (at least 80%)
1/4 cup dry breadcrumbs (any flavor)

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl, beat milk and egg with a fork.
  • Mix in beef, bread crumbs and dressing mix.

1 cup shredded Cheddar cheese
½ cup quick cooking oats
